View Full Version : Need Help with Storing/Saving my Garden Surplus!

We recently started a garden and our squash and zucchini have gone CRAZY! I have so much squash and zucchini, I can't eat it all. We've used it in every conceivable way, but I'm really looking for ideas on how I can store it? Someone suggested just slicing it and dehydrating it and then storing it in a zip-loc bag. But, then they said I have to rehydrate (they said to cook it in water, but I'm assuming I could just soak it in water to rehydrate?).

Anyone every freeze zucchini or squash without cooking it first? I was thinking I could grate it and freeze it that way...

Any ideas would be great. I'd love to have a whole bunch in my pantry (dehydrated) and in my freezer, and then I can give away the rest!

i don't see why you would have to cook it to rehydrate it. you could freeze it and then just rinse it off when you go to use it. :)

you could try eating zucchini and kimchi :D

Share them with the Neighbors. When you Freeze them, they are a Watery Mess. Don't plant so many next year because they are Very Prolific. I don't think you can save them unless they are cooked. You can Pickle them, that's the only holding method I know of.

I slice my zucchini, dust them with spike or other seasonings and dehydrate to be used as chips with hummus or other dips.
