View Full Version : Walnut Basil Pesto

Per request--this is a recipe we got when we attended a workshop on raw foods.
1/2 cup walnuts (soaked) or pinenuts
2 cups fresh basil
2-3 cloves garlic
3 T nutritional yeast
1 T fresh onion (she used scallions)
1/2 avocado
1-2 T olive oil
1 tsp lemon juice
sea salt and pepper to taste
Blend everything until creamy. She also added in some agave, but we didn't like the sweet taste.
DH scarfed up his portion, and he would have gladly eaten more. Not only is he nonRaw, but until I discovered the zuch pasta, he wouldn't even touch the stuff. I only have 24 zuch plants in the garden, and now I'm worried it's not going to be nearly enough. :D

Thanks for posting this. Since there are no zucchinis mentioned in the recipe, I assume that's what you serve this on? Nice change from my usual marinara sauce.

Your assumption would be correct. I only posted the recipe for the pesto, and it is really, really good.

This sounds divine! I have tons of dried basil but no fresh. Otherwise I have
ALL the ingredients. So do you think it would work ok with dried basil?

I don't know about raw, but I had some fresh basil that I froze, so I used that. Also cheated and added some kale (which is apparently Mother Nature's veggie equivalent to duct tape). Didn't have any nutritional yeast either.
Nevertheless, I whipped up a batch the other night while DD was here visiting. HUGE, like double batch of the sauce and ran 6 zuchs thru the spirooli. Between DD and DH, I think I got maybe a small bowlful for myself. Had some sauce left over, so DD has requested it for tonight before we leave for the airport tomorrow.
Just wait until she tastes the cashew creme....

I just LOVE those successes with the non-raw crowd! We are like evangelists, spreading the love!
Later in the summer - I'm going to host a dinner for the non-raw with the best of my recipes. Only the friendly non-raw - I can't feed more than 8, I don't think!
So far - zuchini hummus and onion bread is high on the list!
I want to do a spinach and mush quiche for the main course...from that UK chefs website.
