I was wondering if anyone has ever made their own sun-dried tomatoes. This is probably one of those noteable 'duh' questions, but I gotta ask anyway. Do they have to be sun-dried or can you dehydrate? If anyone has a recipe I would love to try it.

Thanks so much for any help you can give.

...although they are not sundried since I use the dehydrator. I slice them in half, deseed them and place them in the D for about 2 days. I want them really dry so they don't get moldy. They come out great and preservative free and then I store them in an air-tight container.

All I've ever used are from a jar. Do you store them in oil and season the oil?

Thanks so much for your reply. I will try this soon.

Hi Mamoo,

Although you can store and season them, I prefer to just leave them plain. As long as they are stored in airtight container they are fine.

Good luck!

I second those instructions. I have a huge garden, and a lot of my tomatoes end up being dried as slices. I just took a small batch of Romas out of the dehydrator yesterday.

I generally store mine (long term) in using my foodsaver so I can suck all the air out of them. Anything that I know I'll probably use up within the month I'm fine with a quart size freezer bag from Target. They're nice and thick, so you don't get any accidental pokie holes from sharp edges.

Thanks ladies, I'm going to do that in the morning. I haven't done well with my garden this year but I did have a lot of tomatoes given to me and I don't want to risk losing even one precious tomato.

I season mine with olive oil, garlic and sea salt, and they are so yummy!

I put them sliced into the dehydrator, then vacuum pack them.
