Well, tomorrow I leave for a month at the Living Light Institute in Northern California to become certified as a Raw Vegan Chef and Instructor. I have dreamed of attending this school for so long and it has finally come true.
I want to thank so many on this forum that encouraged me throughout the last year and one-half that I have been coming here. It it was not for many of you wonderful folks, I would have gave up on Raw foods a long time ago.
See you in August.

I just wanted to let you all know that I made it up to Fort Bragg, California to the Living Light Institute. It is about a five hour drive from San Francisco. Yesterday was our first day and the class was the Fundamentals of Raw Food. Alll I can say is OH MY GOD!!!!! I learned so much and they showed us how to make so many great dishes. We learned how to sprout wheat grass and sprouts. They served us the most delicous lunch of a great salad with dressing, sprouts, a pate and nori sheets to make tacos.
This place is incredible!!!!!! A whole institute dedicated to teaching EVERYTHING about Raw foods. They also have an inn near the school that I am staying in and everyone here are students at the school. People have travelled from all over the world to come to this school. I feel so fortunate to live in Northern Calfifornia and it being so close to me.
Starting today I will begin drinking wheat grass and green drinks from the restaurant downstairs. They have a restaurant right down stairs from the school that makes the most delicious raw foods and they have a store next door that sells books, groceries and everything that is needed to set up a Raw Foods Kitchen. Today I have to purchase my knives and chef uniform and aprons. I still cannot really believe I am here.
Today we have Knife Skills 101 and 102 and since I am simply terrible with knives, this will be a challenge for me. Next week the entire week is our first hands on class, The Essentials of Raw Foods. This is where the fun begins. Next weekend I have a two day class entitled The Science of Raw Food Nutrition taught by two experts in the field. The two weeks after that is the Raw Food Chef And Teacher Certification training. It is going to be so challenging. There is lots of homework, sprouting assignments, demonstrations, group activities where we have to prepare various dishes. I'm going to bre a busy lady until I leave here on July 24th. Unfortunately, I have classes every day (including weekends) and will not be able to explore the beautiful Mendocino Coast. It is truly beautiful here!!!!!
Everyone is so nice and friendly and passionate about Raw foods. I feel like I am really in my element and glad I made this investment in my helath and my life.

It sounds absolutely wonderful. I would love to be able to attend the school. I checked into it after I listened to the founder of the school on some program last year. But... it costs serious money, which is in short supply at my house, lol. Keep us posted on your progress. Good luck with your knive skills (mine are variable and sometimes things get a little bloody).

Thank you Emma. I will definitely keep you posted. Cherie Soria is a fantastic woman. It does cost a lot, but worth every penny!!!!
