Last night I read in Alyissa's book to soak flax seeds for 6 hours. So around 1am (don't ask why I was up so late, lol) I put 1/2 cup of seeds to soak overnight. I had read to add plenty of water because they expand.
Well expand they did - they at least multiplied if not more - but were more gel like due to absorbing the water. I didn't think it would work for the dish, plus now there was so much and would be to wet to make the flax meal it called for. So I put them in a colander and put the colander in a bolw and put them in the fridge. So - when I get home will the water be drained out of them? Do I just keep them in the fridge -I'm imagining they will never dry unless I dehydrate. Since they go rancid easily do you ever want to dehydrate these? I don't have a dehydrator so that is out. My oven only went down to 170 - darn it.
How do I use these if I keep them soaked in the fridge?
I ended up using dry flax seeds ground up (I had divided the recipe into 4's and only made one serving instead of the 4 it said it made). I used unliquid coco butter instead of liquid coconut oil - I wasn't sure how to make it liquid without getting it too hot. I also used honey which also wasn't liquid, but I used the water it called for to mix the honey and coconut oil till it was all liquid.
OMG this was so good. I'd NEVER miss pancakes with this heavenly concoction. It's sweet, nutty and so good. It doesn't taste like a pancake, but I could live without the pancake if I knew I had this to look forward to.
