View Full Version : Strawberry Crumble Cake

I was inspired by Ani Phyo's Pineapple ice box dessert and a couple other raw vegan desserts. However you'll see that my cake/ ingredients are quite different. This turned out wonderful and it's now my husband's all time favorite raw dessert :D

Here's my recipe. Hope you enjoy it as much as we did :)

Use an 8 inch spring form pan

Crumble bottom and & topping

* 2 cups of pecans, not soaked
* 1 cup of dates, not soaked
* 1/2 teaspoon of sea salt or a bit less

Use a food processor with the S blade to process the pecans and sea salt until broken down into a very rough flour. Then add the dates and process until the mixture becomes crumbly. Don’t over process it.

“Grease” the pan lightly with coconut oil. Then add about 50 to 60% of the crumble mixture into the bottom of the pan. Set aside while you make the cake.

Cake

* 1 cup of young Thai coconut meat (I had mostly firm meat)
* 1 cup of unsoaked cashew pieces
* 1/2 cup of strawberries, chopped into small pieces
* 1/2 cup of thick coconut milk (blend meat and water from one small young Thai coconut with firm meat)
* 6 good sized dates, soaked for 20 minutes
* 1/4 teaspoon of sea salt
* 1 1/2 scraped vanilla beans
* 2 teaspoons of psyllium powder
* 1 tablespoon and 1 1/4 teaspoons of agave syrup
* 1 tablespoon and 1 teaspoon of coconut oil
* 2 cups of strawberries, chopped into small pieces

Use a food processor with the S blade to blend all the above ingredients except for the 2 cups of strawberries. Blend until well combined but not completely pureed. Transfer cake mixture to a big bowl and stir in the 2 cups of strawberries.

Add the cake mixture to the pan. With the crumble left, add about 1/2 of it onto the top of cake and press gently. Cut up a few more strawberries and place on top of crumble. Sprinkle the final bit of crumble on top, still letting the strawberries peak through.

Freeze cake until frozen solid. (about 6 hours or so). Then take cake out of freezer and remove sides of the spring pan. Put cake into the fridge and eat when thawed.

Strawberry sauce

* leftover coconut milk from above
* big handful of fresh strawberries or more
* agave syrup to taste

Blend everything up in the Vitamix until smooth.

I LOVE your blog, and love to see what you make. I share your blog with everyone that I want to impress about raw foods ;)

In fact I made the pineapple cake this weekend because of your blog, and I even went out and purchased a 7" spring form pan so it would turn out like yours. Mine was good and pretty, but not quite like your pictures.

I will have to try the strawberry one, it looks REALLY yummy!!!

I do have one important question......

How do you eat all these yummy foods/desserts and yet stay so nice and trim?
If I eat a lot of nut recipes or higher fat dishes, I gain really fast.

Is it the running? If so, I can't run :(

Hi Cathy, so glad you like my blog! I'm trying to help animals and people one cake at a time :)

I'm happy to hear the pineapple cake turned out well. It's a really good recipe (Thanks Ani!) I always freeze my cakes solid in the spring form pan and then take off the sides. That way I get a nice smooth outside. Then I just stick the cakes in the fridge and let them thaw out a bit. Always seems to work well. Only downside is that you have to wait for it to thaw out :rolleyes:

Yes I think the running really helps me to stay fit. Here's the great thing. Turning completely vegan has solved my chronic knee pains/problems of almost 20 years. I even went through 2 unsuccessful knee surgeries 10+ years ago. I'm pretty sure being raw and vegan has given me brand new knees and a new lease on life. So now I can run a whole lot more without worries. I'm even going to try my first 1/2 marathon this coming October. Raw rocks!!!! :D:D

Oh, one other thing. I like to indulge in rich gourmet raw foods during the weekends. During the weekdays I eat mostly green smoothies and big salads to balance things out (like to get lots and lots of fresh greens). I might have a little leftover cake on Mondays or Tuesdays if there's any left. The strawberry cake is already gone! It was a good one for sure!!

And having yummy raw treats on the weekends keeps me from binging on naughtly cooked vegan junk food (it would be very tempting to head down to our local vegetarian bakery and order their vegan wood fired pizza with tofu as I could eat a whole one myself...eeeek!!) :) Hope that's not too much information....

Joyce, I just sent a link to your new blog to a Greek Orthodox friend of mine. She's the one who sent me the recipes for the cooked moussaka and galaktabourika.

The moussaka should actually be fairly easy to replicate, but I'm still noodling the galaktabourika. Since it's essentially a semolina egg custard between layers of baklava, I'm thinking maybe a stiff vanilla chia pudding for the inside. But what to do about the flaky phyllo dough? Dehydrate some real phyllo instead of bake?

Any suggestions out there? The wraps for the spanakopita seem a little too thick (although phyllo is used for the cooked version).

I'm so glad your knee pain is gone.
My sister is a runner, and even ran the Boston Marathon a couple of
years ago. As for me, I can't even run to the mailbox :rolleyes:
It's all in my mind. But I can walk real fast, and a good long distance, so I do that.

I agree about having the treats on the weekends. I also agree that they are better than having the cooked "healthy" food too.
The other night I was having a hard time craving cooked food, so I just ate some raw treats, and felt good afterwords.

Thank you for this Recipe.Joyce can you subsitute the pecans for something else i have pecan tree in my yard growing up and i always hated them.

Oh that looks and sounds good. Wish I had access to young Thai coconuts, but in my (retirement) community you can't even find a young Thai....:D
