Hello all,

I just got a vita-mix and I am trying to find a almond milk ice cream recipe. Any help?

Congrats on getting a Vita-Mix.

I do ice cream the easy way. Put a cup of almond milk in the blender. Throw in a sweetener of your choice, one or more of the following; 2-3 pitted dates (if not soft let them soak in the almond milk for 20 minutes), agave or honey, perhaps a bit of vanilla, seeds from a bean or alcohol-free extract. Blend that up, then toss in frozen fruit. Keep adding fruit until it is so thick the Vita-Mix can't handle it. Done. Delicious.

I made some last night with almond milk, cashews, vanilla bean, dates, agave, and frozen cherries. WOW! I didn't have enough frozen cherries to make it thicker than a milkshake so I added frozen bananas. Wish I hadn't. It was better with just the cherries.

It's much simpler making ice cream with macadamia nuts or cashews, that way you don't need to strain anything or need to go through the trouble and expense of getting truly raw unpasteurized almonds.

BTW did you want ice cream instructions to make it entirely in the vitamix or do you intend on then pouring it in an ice cream machine? The recipes won't be the same.
