I can't answer you question because I am a first timer too. Can I ask a question here too? Maybe we can both get answers. All I planted was some rainbow swiss chard. It's about 4-5 inches high. Do I cut it and use it now or do I have to wait for it to get huge like in the stores? Will what I cut - regrow? I'm excited about my first veggie gardening experience!!

You have to replant. Unless perhaps you live in a mild climate and let some go to seed and reseed themselves. I've been able to do that here sometimes. I generally plant new seeds every two weeks or so to ensure a crop for as long as I can.

I agree. But you can harvest just a few leaves at the time(like green onions too). Just pick a few there and there from all the plants evenly, and you have fresh greens for longer(instead of keeping full heads in the fridge.)
