View Full Version : Pancakes - Yes, for real!

I found this recipe posted by Veganforlife here (http://www.rawfoodtalk.com/showthread.php?t=25251&highlight=brazil+pancakes).
I finally got around to making the recipe. It is so good it needed a thread of it's very own. I cut the recipe in half and changed it ever so slightly.
Ingredients:
1/2 C Brazil Nuts (soaked 6 hours)
1/2 C pecans (soaked 6 hours)
2 large bananas
1/4 C almond milk
2 medjool dates, pitted (soaked in the almond milk)
seeds from 1/2 vanilla bean
1/4 tsp. cinnamon
1/8 tsp. fresh grated nutmeg
1/8 tsp. pink himalayan salt
Blend in food processor until very smooth. (I used the vitamix) Pour onto teflex sheets into circle shapes and spread to about 1/4-3/8". (Mine might have been a bit thinner.) Allow to dehydrate for about 9 hours @115 degrees. Flip onto mesh screen and dehydrate another 2-3 hours. This half batch recipe made 1 tray of 9 pancakes.
Yesterday I ate 3 for brunch with strawberries and strawberry syrup (blended strawberries and agave). Shared a couple plain with a friend for a snack. Today I ate the rest with a sliced peach, strawberries, and a little Grade B Maple syrup. Very special.
For anyone with kids to feed, or preparing a brunch for guests, or anyone needing a little comfort food (like me), you have got to try this one. So easy and delicious. Would make great cookies, too.

How do they turn out? I had one recipe in a book where they turn out crispy like chips. I like Alissa's pancakes much better, they are simply bananas blended and poured into pancake shapes and dehydrated until pliable like fruit leathers.
Does this recipe make them crispy or what?

They were not the least bit crispy. Very soft, just like pancakes. They would make good crepes.
I've thought about making simple banana fruit leather and Alissa's crepes, but haven't done it yet. I will put some in the D tonight. :D

I forgot to mention I soaked the nuts. The original recipe didn't say, but I figured they would blend smoother after soaking. I measured first (generously as always), put the brazil nuts and pecans in the same bowl and covered with filtered water. Don't remember exactly how long they were soaking. Think it was only about 6 hours. Would have soaked them longer if I had thought of it sooner. I had to put the pancakes in the dehydrator by midnight and flip at 9:00am so they were warm and ready for brunch at noon.

Thanks RawKnitster. I have tried the "just plain" bananas pancakes and they're pretty good. Yours sound like they'd have a little more oomph though. Will try it for the kids. AND ME!!! LOL
Prob is though, dh HATES bananas so much, I can't even eat one in the same room - he even hates the smell. So I found this recipe and was wondering if any of you have tried anything similar:

These are informal directions. As soon as Melissa makes these again, we'll get more specific measurements.
Pancakes:
3/4 c. ground some soaked almonds in the food processor (not too fine--there were still some small almond pieces).
Ground two soaked Medjool dates in with nut mixture.
1/8 c. ground dry flax seed in a grinder and soak in water
Mix all together with leftover carrot/apple pulp from carrot apple juice (from 10 carrots and 2 apples)
Form patties and put into dehydrator at 105 degrees for about 8 hours (Flip half way through and switch to mesh sheet)
Blueberry Syrup:
Put 3 soaked Medjool dates and date water into the food processor to make it smooth, then mix in some blueberries (frozen, then thawed is fine)

I just put this recipe in the dehydrator. I doubled it and make it in my Blendtec. I didn't soak the nuts so I added about 1/4 cup of water to compensate.
I also didn't want to make almond milk so I just used 1/2 cup of water which included a bit of cashews.
I can't wait for them to be done.

Wow well I just had some even though they weren't completely ready yet and they are the most SAD-pancake like raw pancakes I've had so far. As I said the first recipe I tried from a book makes crispy pancakes that are inflexible, stiff and crack into peices, Alissa's was my favorite until I tried these but they were a but hard to cut, and these are just amazing!
Too bad I was out of my raw whipped cream from my cream whipper!

I like Any Phyo's flax pancakes.
3 C flax seed meal
2 tbsp liquid coconut oil
1/2 C agave
1 tsp sea salt
1/4 C water
All you have to do is mix it up in a bowl, form into pancakes and top with what you want (I like more agave)!

Thanks for sharing your substitution ideas. I don't always have almond milk ready to go. I do have a good source of unpasturized California almonds and like to make almond milk about once a week. I find it lasts for 3 days, then I pour the leftovers in an ice cube tray. When frozen the cubes go in a freezer bag. From there, they get used in dessert-type smoothies or put in the food processor with sweet fruit for an icy treat. I haven't tried thawing them again before using. Not sure how that would turn out.

I read the posts - very interesting. I am not sure if they say that you solved the problems. You said the last one with the coconut oil became too solid in the fridge. Did using less c-oil make it work better?

Yes, I just replied to the other thread also. Less coconut oil did solve the problem. I don't quite have the exact proportions noted yet I'll try to take note next time I make some.

Was wondering why they're so dark? Did you use the brown flax?

The second recipe posted by Mary Kay does not call for almond milk, so I'm pretty sure raweater made the recipe posted at the top of the thread. :)

I keep meaning to make the original recipe by Maraw/Anna from Purely Delicious (in the first post of thread). She's always spot on with her recipes. I have loved all the recipes I've tried posted on the raw table and her purelydelcious.net website!
Still up in the air for recipes this weekend but it would be nice to have a fancy raw brunch during the long 4 day holiday weekend here in the states :)

Yes, I used brown.
It's pretty good! You could also make doughnut wholes, too.
