I know my husband would enjoy something like this as an alternative to his beef jerky, and I'd enjoy it too as a chewy, savory snack. This kind of stuff would be a candidate for camping foods too. We're looking to go camping more! I've already got stuff like crackers, granola and "breads" on hand anyway as staples.

Cara4art, I asked this within the last couple of weeks. You might find the thread -- I'd asked about an alternative to tofu jerky.
For my guys' campout, we made jerky with strips of portabella mushrooms and with zucchini strips. They both do shrink up quite a bit in the dehydrator, so cut accordingly. And don't expect them to be as crisp as a tofu jerky. But they definitely have the strong marinaded taste. I plan to still experiment with other veg when I can think of one.
OH! Someone also suggested coconut and recommended the texture. I didn't try it but would like to when I can find coconuts. And figure out how to cut off strips.
I also am thinking I'll try something as a sort of meal or batter all ground up and spread out like fruit rollups or a tortilla, then cut into strips. Seems some grains would give it a texture. I haven't decided what to base it on, though.

Thanks, Soose! I'll look up that thread! I remember seeing it but didn't get around to checking it out. Your ideas about the portabella mushrooms and zucchini sound great. Although DH is not a mushroom fan, I'd certainly eat this, but he'd go for the zucchini idea.
