I don't use agave nectar, because i can't get truly raw nectar here, and i like the honey flavour. BUT when i've tried to sub agave for honey in recipes i've ended up in emulsifcation hell!
The two darn ingredients WILL NOT BLEND! Is this why people us emulsifiers? Because i'm living to try things like raw whipped cream, but i don't want the brown date color (i know, i know, it's such a picky thing, but i'm a picky baker... :))

So do you beegans out there have any tricks of the trade?
