Does anyone have a corn free tortilla or basic wrap recipe?
DH is wonderfull with his support in my new raw food adventure. He just gave me a dehydrator and I would to make some wraps or tortillas. He also got me a spiral slicer and another type of slicing gadget. I can make all sorts of pretty food. I just need to find some good raw food porn to spark some creativity. I've done salads but I know there is more than just that I can make look pretty.

You can use either lettuce like romaine or nori sheets for wraps. You can keep it simple with chopped nuts that you add spices to & then whatever other ingredients. Or make a pate.

I made THESE (http://veganmenu.blogspot.com/2009/04/raw-food-wednesday-red-bell-pepper.html)yesterday and even my SAD eating husband loved them.
Red Pepper Tortillas
(makes approximately 8 tortillas)
1/2 cup flax seeds
1/2 cup water
1 cup red bell pepper, diced
1 tbs. olive oil
1 tbs. nama shoyu
1 jalapeño, diced
1 tsp. Mexican oregano
1 tsp. fresh ground cumin
salt and pepper to taste
Soak the flax seeds with the water and let sit for 15 minutes. Put the flax seeds and the rest of the ingredients into the Vita-Mix and process on high until smooth -- this will tax the machine, but that's why you bought it in the first place. ;)
Spread out the mixture into 7" rounds with an offset spatula and dehydrate around an hour on 105F. Carefully flip the tortillas and dehydrate for an additional 30 minutes or so. Take a peak at this point to make sure they're not too dry -- you want them flexible enough so you can roll them later. You can make these a day in advance and store in the fridge if needed.

Thanks for the help everyone! Is there anything I can sub for the Namo Shoyu? I guess it's the soduium in it but I swell after I eat anything with Namo Shoyu.

You could just omit it entirely or substitute sea salt or maybe miso.

This is an easy-looking wrap recipe by the Raw Chef, Russell James, from his blog. I love the fact that the main ingredient is zucchini. I've already made his bread twice which also has zucchini in it.
Tortilla
3c peeled courgette (zucchini)
3T olive oil
2t lemon juice
Pinch cayenne
1t ground coriander
1/2t salt
1/2c flax meal*
• Blend all ingredients in a high-speed blender until smooth.
• Add flax meal and blend again until smooth.
• Pour mixture onto 2 dehydrator sheets and spread evenly into a circle on each.
• Dehydrate for 8 hours at 105 degrees F, or until able to peel of the sheet.
• Once the dehydrator sheets are removed, return to the dehydrator for 30 – 60 mins, until both sides are dry to the touch but still pliable.
* Flax meal is flax seed that have been ground in a coffee grinder or similar, to produce a fine flour.
