View Full Version : Russell's Spinach Masala Recipe - anyone try this?

Howdy Folks,
With a strange schedule on Saturday, my normal big day of raw food prep will be reduced to only a few hours in the afternoon. On Friday night I'm going to try this apricot yogurt cake with sweet cream and anise syrup in Matthew Kenney's newest book, Entertaining in the Raw. It's not that complicated but I think the ingredients are exotic and exciting. He even uses garam masala! Gotta love Matthew's creativity :)
So on Saturday afternoon I'm going to try Russell James' Spinach Masala recipe:

Anyone try this one out yet?? Russell is another one of my favorite raw food chefs.:D
I would love to hear about any other favorite raw Indian recipes that aren't too time consuming or involve a day in the dehydrator.
Love to hear what others think of this recipe and/or some other lovely Indian flavored raw recipes.

ooooh, I know Alissa has some good ones in her book but I haven't tried any yet. Would love to know your favorites in her book as well ;)

I actually found macadamia nut oil at our local co-op a while back when I was making RFRW's red beet ravioli. I hope it's still good :)

I have made this dish a number of times. It's pretty simple. I did cut down on the banana. I think I may have doubled the kofta part, because it doesn't make a lot.

Hi Mblessed! (waving back atcha!:)) I was just down in South Deerfield for a birthday party this past Saturday.
Thanks so much for the malai-kofta recommendation! I do remember seeing that one and probably forgot to copy and paste it into my email files. Sounds like a yummy one!

The samosas are made from blended up young Thai coconut meat. They might work very well for spanikopita. Great idea!!:D

To others who might try this dish: I thought the fresh cilantro/coriander and fresh mango were really great in this dish, so if you have them available, don't skip them. That's just my suggestion.

I didn't have fresh cilantro and only had frozen mango which I didn't feel like thawing.

gosh I just printed out a recipe for Russell's stuffed grape leaves (on his blog) as I'm thinking summertime is so nice to have Greek style foods.

Thanks for the link, and more importantly, my DH thanks you. We love greek food, and before I went raw, I made the best moussaka and galatabourika in the world. It would be wonderful to recapture some of those flavors again.
I'm going to try to set a day next week to do nothing but experiment with some recipes. You've absolutely inspired me!

Hi Jane b, I just updated my blog for a couple Greek style recipes I made this past saturday: Russell James' Stuffed grape leaves with mint cashew aioli and Matthew Kenney's tabbouleh. Both were really yummy!!! :D
