View Full Version : Freezing veggies & Fruit about to spoil?

I'm leaving for a road trip to take DD to Missouri for a college visit. I have some fruits and veggies in the fridge that I don't want to waste.

What can you freeze and what can you not - to have them be ok for putting in the vitamix? My vitamix should be here by the time I return next week :)
Well hopefully - it hasn't been shipped yet.

I know ideally fresh is best, but I don't want to waste these.

Apples
Avocado's - I read about someone doing that?
Kiwi
organges
baby carrots (can I just freeze the bag and take out what I need when ready to blend)?

Sweet potatoes? Hmm - I have a few of these and they have been in the pantry for a few weeks. Do these freeze well? Maybe cut up so you just throw in the blender?


Beets will hopefully be ok in fridge till I get back.

I would peel and freeze the avocados. Carrots in their cello bags stay fresh in the fridge for a loooong time. Apples keep on the counter for weeks. I kept the last batch of kiwis from Costco on my counter for about a month without problems, so they should certainly stay good in the fridge for a few extra days. Or you could throw the fruits in a regular blender with a little water and freeze. Personally, I would take it all on my road trip!

Hi MelanieC - I was having a difficult time getting this to post - hope this does it...


Apples ~ I've had bags of apples in the fridge for weeks - they'll be fine in the fridge! Trust me - I live in the apple capital, Washington State - wink!


Avocado's ~ This is what I do. I peel them and puree them in the FP, or you can mash them by hand. You can add some lemon juice if you want, but I use my Food Saver vacuum system and it pulls out all the air, so there's no turning brown. When I'm vac'ing something soft like avocado - I put it in the FS bag, place it in the freezer until frozen solid, then I vacuum it. If you don't have one - just a ziploc bag and get as much air out as you can. It'll be great.

Kiwi - I've never frozen kiwi, but I wouldn't hesitate if you're worried about it going bad. If you're going to use them for smoothies, I would peel (if you peel them for smoothies), slice them and freeze.

organges - I've frozen oranges using my Food Saver and they freeze just fine. Peel, I pulled mine in half to save space and popped 'm in the freezer.

Sweet potatoes? I've always heard that refrigerating potatoes is a no-no, something about their sugars won't develop of the starches go wonky... depending on what you were wanting to use them for - I would probably chunk them up or even puree or shred in the FP and then freeze.
