View Full Version : insane raw cherry-vanilla-coconut ice-cream!

Just made this in my food processor - so-o easy:

1/4 cup of raw cashews
1/4 cup of dried coconut shreds(unsweetened kind, of course!)
1/2 tsp. or so of pure vanilla extract
3/4 cup of fresh cherries, pitted
1 1/2 cups or so of frozen banana chunks
dash of salt(brings out other flavors, but optional)

Process cashews and coconut until just about powdery for the cashews, then add bananas and vanilla and process until "doughy". Then add the cherries and dash of salt and process until smooth, soft-serve style. This makes enough for two dessert-sizes dishes of this, which are now sitting in the freezer to firm up more. Going to be hard to wait, because this is insanely yummy!
Only by eating raw, can one eat a dish of "ice-cream" and call it a meal, any time of the day - LOL!

Sounds good! What other nuts can be sub for the cashews other than walnuts. I have allergies.

Are you allergic to all nuts?
Actually, you can do this entirely without nuts too - I just added the cashews to give a teensy bit more richness(just 1/4 cup worth, for two dishes). Maybe you could add a teaspoon or two of extra-virgin coconut oil - this would intensify the coconut flavor too.

So far it's only walnuts and cashews. I'll try it without the nuts or maybe some Brazil Nuts. I'm kinda affraid of nuts since reading they are pasturized and contain cancer causing chemicals. So many recipes use nuts that I hate to exclude all those wonderful creations.
