View Full Version : Coconut milk ice cream

I noticed at my health food store there's a company that makes soy ice cream that now has coconut milk ice cream sweetened with agave nectar. I bought some a few times even though it's almost certainly not raw and it's really good.

I decided to make my own tonight, I blended dried shredded coconut (would be even better to use fresh coconut as I'm not sure the dried one is raw) with enough water to blend. I almost decided to use it as is for the ice cream since my Blendtec got it really smooth but decided I'd strain it anyway, maybe next time I'll try unstrained.

I then put the coconut milk back into the blender with agave and half a vanilla bean and a bit of salt and blended on high speed. I then poured it into my ice cream maker and waited 10-15 minutes.

It's really good but it's better with fresh mature coconut to make the milk.

I found it last summer at Whole Foods, now they have it at the local supermarket. I have never been really into ice cream, but I do eat this, I need the fats from the coconut.

mmmm.. I love love ice cream, especially this time of year!! I'm going to try this for sure - your homemade version. Maybe as popsicles too since I dont think we have an ice cream maker. Thanks for sharing!

Thanks for Sharing sounds like I need to try it although I think the Young Coconut would work better. The Flesh is So tender and tasteless you could just blend it and use all of it.

The mature coconut makes it much more rich and creamy since there's far, far more fat in a mature coconut (a mature coconut has 10 times the calories, 1400, of a young one which only has 140). You also get much mor meat from a mature coconut.
