Hi all. I am wondering about fat soluble vitamins especially in terms of food combining. I have always learned that having some fats with fruits and vegetables helps the vitamins be absorbed better. That is pretty much common knowledge in the nutrition world. I remember about a year or two ago hearing about a study in which people either ate a fat-free salad or a salad with a small amount of fat, and those who ate more fat had significantly better vitamin absorption.
However, in terms of food combining, it is best to eat fruit on its own. Even though this is best for food combining, I wonder if we'd lose some of the nutrients this way. Maybe the body stores it for later when we do eat fats (even if we aren't gaining weight)?:confused:
Also, what about people who eat low-fat raw diets without overt fats? I wonder how many of their nutrients would get absorbed well if they aren't actually eating some fat. I know many people say that fruits and vegetables contain trace amounts of fats, but obviously this isn't enough if people in the clinical studies were not absorbing vitamins as well as those eating some fat with their salads.
