View Full Version : Eek, Almond paste!!!

I tried to make some almond butter in my Green Star juicer. I had hoped for better luck in the juicer than I have had in my VM or FP. I ended up with a crumbly paste which I then tried putting in the fp with added flax seed oil and then to the V.M. with even more oil. Three dirty appliances later and still no almond butter. I made almond butter several years ago in my food processor with relative success. I think it might have to do with the almonds. I had both organic and non-organic raw almonds. My cleaning lady organized my pantry for me and combined all of the almonds. I suspect the the Costco (non-organic) almonds ended up on top of the container. I am wondering if anybody has had better success with organic almonds. I founds some threads regarding almond butter woes, but didn't see organic vs non-organic as a success factor.

wow that sounds awful :( i hope you're able to figure something out soon. sorry i can't be of help, as i have never made almond butter before... it does sound yummy, though! :D

Take what you have and make Crackers, use some in a Green Smoothie. I just try to RECYCLE everything. When making Almond Butter.....You don't want it to over heat in the Vita-Mix. You can either let it REST or use the Food Processor First then add it to the Vita-Mix. It can also over heat in the Food Processor. So just take your time and let it REST......While you REST.

I don't know about Organic vs. Non. I just use whatever as most aren't RAW anyway.

it takes FOREVER, like 15 mn off and on letting the thing cool running it letting it cool, etc. but the only way ive had luck is to coffee grind them FIRST, then put them in the FP and process the heck out of them. EVENTUALLY it will get to a chunky PB consistency. i dont have a vitamix or anything though so cant advise you on that. ive always used non organic and havent had a problem. but it IS time consuming and i cant really afford almonds in quantity in this country so i dont make it anymore:( be careful not to burn out your coffee grinder though; ive burned out 2 grinding sesame and almonds etc. i keep wondering if theres an actual GRINDER like those ones at whole foods they have for the PB that would work better and give dreamy creamy oily almond butter.....

I also tried running almonds through my Omega juicer in the past (as it says that it makes nut butters). And the juicing gears don't heat up, which keeps things raw. However, the only thing that came out was dry crumbly almond powder. I am not sure if I needed to wet the almonds beforehand or add some oil etc. I have no idea how they actually make those raw almond butters that are sold in the store.... as the only ingredient listed is 'almonds'. It doesn't say those use any oil.

if you soak them you dont end up with a creamy butter tho! cuz they are wet/sprouting!

I soaked my almonds first and then drained them and let them dry out.
