Eat them, I'm Serious:). I freeze them and after a while they will still turn Brown but I don't let that bother me. I have never tried Lemon juice, you might want to try that. Dehydrated BANANAS are RAWlicious.

The only way they won't turn brown is peel them and freeze them. I hate waiting until they are brown and icky looking. I save those for my husband that doesn't know any better, and I keep the fresh ones for myself. ;)

Yeah, eating them right away in the best advice. I also don't mind if they are a bit brown but I'm invited to a party next weekend and I want to bring something that is also appealing for cooked foodists. I was thinking about a cake with a crust of dried fruits and almonds and layers of fruits and "banana cream"

You can refrigerate them in the peel and it won't immediately turn brown.

Cerellia, do you mean the peeled fruit in a recipe? Make a solution of lemon juice and water and dip them in that as you slice them; they'll stay white, for instance on a fruit tray.

Or do you mean the peels as a banana sits there? You can refrigerate to 58degrees and it will really slow the sugar spots (the brown spotting). We keep them in a wine cooler set on the high of two temps. A regular refrigerator (much cooler) will hasten the peel turning brown, but the fruit inside will continue on at the same freshness it started at when cooled for quite a while.

Mine go into green smoothies, so the browner the better. I buy 4 bunches at a time at Costco, so some of them are bound to get brown. In fact, I don't like to even eat them before they have lots of brown dots all over them. They aren't really ripe before that point. Firm bananas have always bothered my stomach, ripe ones don't.
