If I squeeze lemon juice into water and leave it overnight, what will happen? Will it deteriorate, compared with lemon that has been freshly squeezed in?

I've never thought of it that way. I would just drink it. I don't do Lemon Water, I do Vinegar Water and it's always sitting around and I drink it. I would drink it anyway just for the Water..........

I do it all the time because I don't want my water ice cold. Usually I put it into a container with the lemon slices and then start drinking on it the next day. I wouldn't leave it more than one night though, then the lemons start getting a little funky.

I always drink mine if I leave it out. It's not as fresh, but it's never hurt me.

Fresher is always better (lose nutrients and vitamins as soon as fruit and veggies are cut) but as to how long something can sit, I'm not sure. I've read that fresh juices deteriorate quicker than, say, green smoothies, that can be left overnight because of the high amount of fiber in it. I'd say if that's how it has to fit into your schedule to make it work, you're still ahead of the game for consuming it vs. not.
