Hello,

I am brand new here and new to raw foods. I signed up for weekly organic produce and received my first delivery today which included 3 large beets. I have never used beets before but am excited for the challenge.

Does anyone have a green smoothie recipe that includes beets. I'm just starting with green smoothies, so I need it to be heavier on fruits than on the veggies.

Any other easy recipes that include beets?

Here is a beet receipe from the Book the Joy of Juicing:

The Color Purple

1 cup grapes with seed, any color
1 medium beet, cubed
1/4 head of red cabbage, chopped
1 cup of blueberries

Juice all well in a juicer, stir well and serve immediately
makes4-5 cups

Pride of the Detox Juices:
6-7 carrots, sliced lengthwise
6-7 starks celery
1 large beets, quartered
1 lemon, quartered
3 garlic cloves (depending on how strong u can stand garlic, use less if needed)
1 inch ginger root
2 tablespoons of raw honey (or any raw sweetener)

juice all ingedients except honey. Add honey and stir well, serve Immediatey.
Makes 3 cups

You can finely shred raw beets -- use like shredded carrots (or, mix with carrots), and mix with some (raw, of course) salad dressing...
Or, you can use a spiral slicer (saladacco) to make "beet pasta", which is really good with pesto! :)
Just cut a beet into about 4 pieces, with the greens, if you got them too (and they aren't too icky/wilted), and add to a banana, frozen blueberries, and water, to make a smoothie.

Be informed that your Urine and BM might be "RED" from the Beets. But its OK.

Until I began my raw vegan journey, I didn't know the wonder of beets... raw beets taste nothing like those disgusting smelling and foul tasting cooked versions of this lovely veggie (sorry if I offend you who like them this way). I used to gag and dry heave at the smell of them cooking and wished I could vomit after eating them once - man oh man fresh beets taste nothing like cooked beets thank God...Fresh beets are great to me juiced (very sweet though) and or as someone else suggestion shredded like carrots (sometimes make a shredded carrot/cabbage/beet type of salad/cole slaw mixed with a dressing that I whip up)

You'd can just have beets/apple/carrot juice and probably get away with the combination... very sweet though but very satisfying as far as hunger goes and energizing...

Exciting thread!

My little beet seeds I planted about 2 weeks ago just poked their selves through the soil!


Hurray for beets!

Anyone knowledgeable about harvesting some baby beet greens without adversely affecting the growth of the mature plant?

Yes. Beet seeds are actually a cluster of several seeds. When they spout, you can harvest a few of the greens, leaving at least one of them to grow into a mature beet. This is good for the beet and for you.:) In fact I harvested some beet microgreens today and am eating a salad with them in there. They taste great.

I juiced 2 beets and 2 carrots - drank the entire glass.
It turned my urine red for FIVE days. :eek:

Is that normal, or do you think my liver/kidneys aren't working very well? :confused:

I read that because Beets are powerful you shouldn't eat more then half of a beet a week? Is that true?

I just wasn't sure if the red coloration should stay in my system for 5 days - I couldn't find anything on the internet about the normal duration of the dye in the body, so I was a little paranoid :)

But, 2 beets worth of juice is A LOT of dye in the system - so I guess it's not that abnormal for it to stay in there for that long :rolleyes:

That seems a bit paranoid?
After all, beets are a mainstay of some cuisines, and people have eaten them for millennia.
Yes, they are incredible blood purifiers. "Beets for blood" is an old wives' tale... very, very good for you. I would say that if you have any adverse reaction, cut back and limit them to just a bit, but if they aren't causing you trouble, eat what you like.
Be aware that beets are a root veggie, and as such, do have rather high carbs/sugar content. Maybe balance them with the greens :)
