Hi, everyone! I just signed up, so I thought this would be a good place for my first post.
I'm 55, post-menopausal (:D), and was diagnosed with Type II diabetes last year. No insulin, only Metformin. I discovered Raw after watching the documentary on reversing diabetes. Doctor is on board with reservations as diabetic nutritionist's recommended diet is identical to South Beach Phase 2. Requires me to take a multivitamin for insurance.
I'm doing fruit for the first half of the day, and veggies the second half. I am consciously choosing one or two cooked foods (no starches as I do better with low carbs) per day, usually a low carb yogurt and/or some oily fish. Drinking a lot of water. Yesterday I started experimenting with green smoothies using kale as the base. Blood sugar not spiking, so doctor is happy so far.
Everything I've read so far advises to transition slowly as to not suffer nasty side effects. So far everything has been humming along digestively. Am I just lucky or is there a little time bomb waiting down the road? What exactly should I be looking for?
I'm really looking forward to hearing from other folks on the board. I've been lurking for a few days, but couldn't find what I was looking for.
