OK, I just bought a bunch of dandelion greens. Got them home all excited, washed them and tasted one. Hmmm, very bitter. What do you do with them? Any recipes that somehow cover the bitterness? WIll it disappear in a green smoothie? I don't want to put some in and ruin the whole smoothies for me.

Then do it gradually. Add some and taste it and then add some more. Do not risk too much.
It will all depend on the fruit. Bananas will allow you to add extra greens.

If I want to mask bitterness of the greens in a smoothie i will add some lemon juice or Lime or grapefruit since this is naturally bitter and will quickly mask the bitterness of the greens. You may want to also add a little something sweet also .

They were probably old. Young greens don't taste bitter at all.

I just put 3-4 small leaves or 1-2 large in with 2 cups other greens in a smoothie.

I make a curried cashew sour creme dressing for a dandelion salad. Bitter - yet addictive!:p Yum!

MAKE A SALAD AND ADD CHOPPED STRAWBERRIES. very nice. balances the flavors. even better, if you can get some SORREL, which is sour, and make a salad with that and the dandelion leaves and add strawberries, and a sprinkling of salt and some olive oil= even nicer! the flavors balance nicely. if you cant find sorrel in the shops, you might find it in your yard or in a meadow. it like acidic soil and seems to pop up soon after soil has been turned, as well as growing near water sometimes.
