View Full Version : Suggestions for recipes with garlic

Hi,
I've been eating mostly raw, and try to eat 2 raw garlic cloves every day (for health issues). I've been crushing them and putting them in a bowl of extra virgin olive oil with sea salt and freshly ground pepper and then dipping it with Ezekial bread (which I know is not raw).
I want to try the 30 day challenge in June (very nervous!), but am trying to figure out how to get my 2 raw cloves in every day in a way that is raw and that won't burn my mouth.
Ideas for a tasty recipe??

I've put garlic in everything-soups, salads, chopped veggies, dips, etc. You can easily make guacamole or salsa with it.

Do you think if I put 2 large raw cloves in a big salad, it wouldn't be too burning? The olive oil helps it I think, but I do put Barlean's Flax oil in my salads, so it would kind of be the same thing I guess.
Ohh....and I love guac, I could put extra garlic in mine to help me reach my 2 clove quota!

Just last night, we had Roma tomato soup... a couple of Romas, a bit of Olive oil, a clove of garlic, and some water, blended until smooth, served with a chopped up avocado on it.
You can also blend your garlic with sun dried tomatoes, fresh tomatoes, olive oil, basil, a few other herbs, and pour over zucchini 'pasta'...
Garlic is just too good to not slip into savory dishes! :)

This is how I got my kids to take garlic when they were sick and still young. Get the vegetarian capsules and just slice the garlic into long slices and stuff them into the capsules. After your meal swallow a few capsules and it will only take you 2 meals to have your 2 cloves dowon. Good Luck.
P.S. I had them take it after a meal or had them eat something before taking them because then they didn't get that garlicky taste/garlic burp thing that can happen.

I was actually wondering about doing that! Does it matter then if it is not chewed?? It's not going to burn a hole in my stomach I guess since you are OK! I have some vegetarian capsules too somewhere around here!

Haven't read all replies but some things I think of:
Zucchini pasta with marinara sauce, alfredo sauce or chow mein sauce (all these sauces use garlic)
Salsa
Guacamole
Soups

Ocean, if you chop the garlic well before adding it to the salad it should be fine. That's how I use to do it. It's easier to add to other recipes like I mentioned.
Soaking the garlic in lemon juice or vinegar is actually the healthiest way to consume it if you're able to.

I put my fresh garlic through a garlic press and I add it to almost everything if I am feeling a bit off. I have even just squeezed it over veggie salads. Sauces, salad dressings, soups, pesto. I have even gone so far as to swallow whole cloves of garlic like taking a pill and have had no ill effect. Basil is going strong now so a nice pesto sauce over veggie or kelp pasta would be great.
Seat of your pants Pesto
Gobs (yes, this is a technical term) of fresh basil
pine nuts, or soaked walnuts
cloves and cloves of garlic
extra virgin olive oil
teeny, tiny hint of nutmeg (if you like nutmeg)
Put into food processor and just process the heck out of it. Play with the ratios to taste.
I do a lot of seat of your pants uncooking. Years ago, while still eating SAD, I had a room mate who used to play in the kitchen with me and we would just forage and come up with what she dubbed "hot dish surprise". Later we came up with "cold hot dish surprise". Only problem is when you come up with something out of this world and don't remember how you did it :rolleyes:

Some of the nut cheeses contain a lot of garlic. So much that I didn't like them as the recipes were written.
