I read that one can use a nut milk or coconut milk with ice, agave, and ice cubes to make ice cream just in a blender. So I bought some young thai coconuts and made some coconut milk. I used that milk along with agave, ice cubes and cacao powder to make the ice cream. I blended it all up and put that in the freezer and well it wasn't very good; the texture was off and it wasn't smooth and creamy. Does anyone have a good recipe or any ideas to help make a raw vegan ice cream that doesn't require an ice cream maker, you can just make it all in a blender, and it truly resembles dairy ice cream?

YOu can search for recipes from the naughty vegan (raw vegan icecream recipes) here on this forum. Just use the banana. There are recipe books at comfortably raw dot com, and at the naughty vegan dot com. At gone raw dot com there are several ice cream recipes that do not require an icecream maker.

From Dom's site: the original method for preparing a gelato-style ice-cream. Here, salt sprinkled on ice is used to lower the freezing point of ice from 0°C to -16°C. A tall, stainless steel pot holding the icecream batter is embedded in the salted ice and then quickly spun in the ice to quickly set the ice-cream in a matter of about 10 minutes. The ice cream sets quickly forming tiny ice crystals, which well made ice cream is. I have put together 2 video clips to explain the method for my ice-cream recipes. These can be viewed here

It would go much better with an ice cream machine. Also I don't think young coconut is anywhere near rich enough to make ice cream. I blend macadamia nuts or cashews with water, or if you don't mind the trouble blend the meat of a mature coconut with enough water to blend and then strain it. Then add honey or agave and flavorings you want.

If you don't have an ice cream maker (they are $20-40), you can freeze the mixture into ice cube trays and then process the frozen cubes in a food processor to turn them to ice cream.

I mostly just make frozen banana ice cream these days.

Chuck frozen bananas into a food processor and blend till creamy.

You can add melted coconut oil at the last stage (after it's been blended and is creamy) while the food processor is on to get an even creamier ice cream.

Flavour with anything you want, cacao, berries, cinnamon, coconut, mint etc.

You can go through the process and put it in an ice cream maker, but when I want something cold and creamy there is no time for that.

My favorite quick fix is putting nut milk in the blender with dates or other sweetener, blending until smooth, then adding frozen strawberries or blueberries until it is so thick the blender can't blend in anymore. So creamy.

Another method is to freeze the nut milk in an ice cube tray, then store the cubes in a freezer bags. After blending the coconut, sweetener, and flavorings, add the frozen cubes until it is thick enough. Not as creamy, but still yummy.

Be careful! It is easy to eat too much. I always do. :rolleyes:

I guess using an ice cream maker is probably key.

I just pop some frozen banana chunks along with some mango or papaya in the food processor, and it comes out divine, like soft-serve ice cream. If you want it a bit firmer, just put it into the freezer for a little bit - not too long, otherwise it gets really hard. I just did the papaya-banana combo in Hawaii at the house swap that we had, with a Blend-tec - one word: awesome!

You don't need an ice cream maker!

I have one at home and it sits there gathering dust, I'll get it out eventually, but trust me, the frozen banana/food processor thing will BLOW YOUR MIND!

Oh wow -- I have been making awesome ice cream from young coconut flesh. It is VERY creamy (and in my opinion much better than ice cream made from cashews). If your blender is strong enough to handle ice cubes you should be able to make it.

1.5 cups coconut meat
1.5 cups coconut water
1/4 cup agave nectar (I use a little less because I don't like it really sweet)
3 tablespoons coconut butter
1/2 teaspoon lemon juice
1 teaspoon vanilla (better to use seeds from 1/2 vanilla bean)
1/4 teaspoon salt

Puree on high until as smooth as you can get it. Then pour the mixture into ice cube trays and freeze. Once frozen solid you can throw them into your blender. You will likely have to return it to freezer for a little while as I imagine it will get quite soft.

NOTE: the first time I made this I used the method described above EXCEPT I put the frozen chunks through a Champion juicer which gave an amazing result. Since then I have actually bought an ice cream maker, which is how I make it now.

I also agree with others here that frozen banana alone makes unbelievable "ice cream". I make it with a Champion which makes it incredibly smooth and creamy but I used to just make it with a food processor. A really nice combo is frozen banana and pineapple together.

I have an ice cream maker and it has never been turned on. I love the banana ice cream too much.
Today I made it with a large handful of sunflower seeds. Some frozen blackberries, raspberries, blueberries and 3 bananas.
It was smooth and creamy and tasty.
