A fav sushi filling....

So I've got loads of burdock root to dig up, now that I know what it is....I'd like to pickle it.

any one with ideas?

I've searched the interwebs - I'm waiting for my "Wild Fermentation" to be delivered....but in the mean time....


It's a holiday without a project! I'm sick of cleaning and organizing....

Any ideas on pickling burdock root?

What's burdock root taste like?

If it's a sushi filling I could imagine that you could do a soy sauce type of pickling. Me and mums grow our own peppers, garlic, and ginger and we put those in a giant jar full of soy sauce and other spices. If you let it sit for at least a month it becomes excellent as a condiment to add to salty tang to other dishes, or as a standalone vegetable.

IF you want a Rawfood brine I'm sure you could do a salt brine, but you could also chop whole sugarcane and put that in the brine. Sugarcane shoots have a lot of good minerals and vitamins in em too.

Newbie Question:I have grown Burdock root a few times and I could never figure out how it became orange and as tasty as the roots in the Japanese markets. Any information is greatly appreciated.
