I've identified another of the rampant weeds in my yard.
Burdock!
Once again - I was digging it up and throwing out the big root while likely purchasing herbal supplements with burdock root!
Another big LOL in life, right?
Ok - so anyone know about using the root raw style?
It is a 2 year maturation process with the plant tiny one year - superhuge the next.
Are the spring greens edible, tasty nutritious, first year around?
Second year - the leaves look huge and tough - scared of that! Unless someone knows something that can change it?

dude. sounds like you have another candidate for "i want another crop like mint" ;)
if noone responds, check out "one plant at a time": on the www.healingwiseforum.com in the healingwise and plant allies section. i think they have a thread on burdock under one plant at a time.
darn. i have to wait two years? that stinks. i was going to plant some but i dont know if ill have this garden space to use for two years :( i have a bunch of seed.

Burdock root can be cut up or grated on salads. Also is a wonderful blood purifier so can be used to make medicine. I have made some and it is super!

all the weeds in my garden were food, I wouldn't need to grocery shop for the rest of the summer!

so I took 2 small burdock leaves...I had read that leaves, root and stem are edible.....
so took 2 small ones - about 5-6 inch, the huge course ones get like 10-12, even larger.
I wash and trim, popped a little in my mouth - so intensely bitter, I got nauseous - and I eat an entire meal of dandelion greens with a nice creamy dressing of course.
Put the rest of those 2 leaves into the smoothie - 2 cups mint, 1/2 pineapple, 2 banana.
They tainted the whole thing!:mad:
Oh well - back to digging! I'll try to do something with the roots anyway....maybe try some even younger leav..
I'll give it a rest for while!

Kaybee - thanks for the link. I'm definitely going to put some leaves into sme ACV in the fridge to make some bandages. COOL!
T Bird, I was just thinking about learning about burdock and was wondering the same thing about the leaves...thanks for sparing me some nausea and saving me a smoothie...LOL, I would've probably done the same thing.
