View Full Version : Don't throw away your old meat tenderizer...

Sorry for using the M word, but I made some chilly the other day at work (raw, vegan restaurant), and it was off the hook. I haven't quite perfected it, though my boss said it was my best recipe yet,... but here's the fun part...

All of the vegetables that I didn't put in the blender ( Onions, bell peppers, tomatoes, and celery) were tenderized. I didn't have a meat mallet tenderizer so i used a metal pitcher.
What you wanna do is lay the veggies out, as flat as posable, on a cutting board. You want large flat pieces; you can chop it up all you want afterwards. If you use tomatoes, remove the seeds first.
Wrap the cutting board (over-under-over-under...) with a couple layers of plastic wrap, and pound the hell out of your veggies until you've successfully irritated everybody within earshot; your food will come out soft and juicy.

Imagine all of the fun things we could pound and smash! I'm thinking about beating the hell out of some broccoli.

No, GlimR. The idea is not to pure the vegetables, but to keep them somewhat intact while softening them by breaking down the cell structure. The onions, for example, come out with a texture similar to those that cove been cooked. it takes away some of the crunchiness that comes along with a lot of raw foods.
But, it's up to you how much pulverizing you want to do. I suppose, if you had the time and energy, you could make a smoothie using this technique. But I'll be sticking to the blender when it comes to that.
