Hello All- Newbies here.
We newly discovered the joy of the chia seed, and are big fans. We have made just about every kind of pudding you can think of.
Does anyone have any savory suggestions for chia? I have experimented with making a chia "cottage cheese" and feel pretty close to a breakthrough...so far it's been a good additive to "egg salad" and stuff like that. Just can't bring myself to eat a bowl of it...yet...stranger things have happened lately.

Could you share some of your recipes? I have not used Chia seeds yet, so any recipes would be great ;)

I made a chia-lemon-poppy-seed dressing that was yummy, and it has no oil in it.
Soak chia seeds in water and drain out the excess water through a sieve. The clear, jelly-like stuff will not separate from the seeds (I wish it would- that would be cool.)
Add lemon juice, salt, pepper, agave, and a ton of poppy seeds... chopped chives are nice, or basil would probably kick a$s in this dish.
Maybe you could use stevia instead of agave. Stevia works great with citrus flavors.
When I've made it I've blended the lemon juice with a touch of bee pollen which tasted interesting and gave it a nice yellow tint, but I know that stuff isn't vegan. I like this dressing to have some color, though, so use a pinch or two of turmeric.
Stir well before serving. Do not blend the chia seeds.

Oh! people make porridge with chia... saw a recipe on youtube.

For the "cottage cheese" I made a heavy cream out of some macadamias and almonds, added in some garlic and a little salt and pepper. I used less liquid trying to make a lumpy consistency...it was lumpy. It was a bit bland and not really palatable on its own. Thinking maybe some finely chopped chives or even a little bit of shallot powder would help it.
More often than not we just make a sweet "mylk" and simply add some chia seeds to it. They swell up like tapioca balls pretty quick. You can have pudding in like 30 minutes. If you let it sit over night it gets a bit thicker and gooey-er. You can make any flavor you can think of- your imagination is the limit.

That "cottage cheese" recipe sounds great. Wish I could get decent macadamias here, they are all salted and usually old & rancid. Don't know why the store even bothers when they don't sell enough to keep them fresh. I live semi isolated, so it can be a problem to get some things.
