View Full Version : New zucchini pasta dish

Hi friends,
I had the best zucchini dish at the Greenery here in San diego. They made the noodles spaghetti sized and added a yummy variety of ingredients. I can't find an exact recipe, but I made it the other night and it tasted pretty similar. It reminded me of a chilled pasta salad.
I included a pic of the size of the zucchini noodles.

2 zucchinis made into noodles
The rest is based on how much you want to use
Diced:
Tomatoes
Bell peppers
chives
olives (slice in half)
parsley
apple cider vinegar
olive oil

How funny! We are on the same wavelength! :) I just finished posting in my blog about the mock spaghetti I had last night. I put it in the dehydrator to soften and dry out the wateriness. I've made zuchinni marinara many times, but it never really passed for spaghetti. This time my husband thought I was eating real spaghetti, and I did, too!

Alissa's zucchini with marinara is just like this. It's sooo good.

Do you think this would hold up to take to an outdoor picnic on Saturday? I like to fix this at home, but it seems to get watery after awhile.
This would be a good dish to take.

I have yet to find a marinara that really has a nice deep rich flavor. I like Alissa's, but am looking for something richer. Solar living, could you give a starting recipe for the ingredients listed?

Yeah, make it friday and it will be great. I was eating it after being in the fridge for at least 3 days. I have done the marinara and the alfredo and was just looking for something different. This is really light and flavorful.

This is a starting recipe. I tend to go by the flavor I'm looking for so the vinegar and oil could vary depending on your tastes.
3 zukes
1 roma tomato
3 chives
8 olives (halved)
1/2 yellow bell pepper
1/2 red bell pepper
1/2 green bell pepper
1/4 cup parsley
1/4tsp. salt
Rough estimate of:
2-3 tbls. Apple cider vinegar
2-3 tbls. Olive oil
another addition could be a pinch of oregano
