View Full Version : What about Beets and beet greens??

I got some beets from my Organic Co-op (and my darned cheapo juicer just died last week) so I'm not sure what to do with the beets AND the greens? Can I add them to a smoothie? Any suggestions are welcome!! :p

I love beet greens. They're delicious in smoothies and salads. I'll even eat them plain raw. They're sweet and salty. Before I went raw, I loved them sauteed in a pan with a little oil and water.

By all means, put them in a smoothie!

Beets are wonderful too. They're great shredded in a salad, juiced or in a smoothie.

They're both powerful cleansers and builders for the blood.

I put beet greens in my smoothies and they taste great!
There is also a fabulous smoothie on the blendtec site called a Hot Pink smoothie and it's the best one I have ever tasted.

I don't peel my beets, i just wash them carefully and cut off where the greens have been.

I grate them in salads. They're great with a lil lemon juice and a few rasins!

I do pill the beet and use my food processor option to gratted them. Then add apple vinager, olive oil or sunflower oil, sceltic sea salt, a little bit of raw agave. It kind of give a pickle taste. It keeps many days. Delicious with anything. I do the same with carrot except that i add ginger/garlic.

Beet greens, can be juice or eat as salad. They waist fast i find, so it needs to be eaten as soon as possible.

You're welcome Susan. Some people peel them and some don't. I personally peel mine before using because, even after washing, they still look like they need it. It's just a preference.

I slice beets, sprinkle with a little sea salt and dehydrate them and make beet chips

Do they have to be sliced very very thin? I don't have a mandolin and have to use a knife.

That blew me away it was sooooo good, I've made with almonds too and it tastes just as good.

OMGosh!! I'm drinking this now and it's amazing!! Thanks soo much for posting the recipe!! I didn't have any coconut water, but subbed light coconut milk (not raw, I know). It's DELISH!! Now I have to find a source for coconut water....
