I am really delighted that I finally came up with a cookie that my children really like! I was thrilled to see them fighting over the last one - I know how odd that sounds, but my kids have come to look at everything I make with a cautious eye. "What's that? It's not for me is it?" - that is what I hear most days. But this one is a true winner and I wanted to share it with everyone here. It is also nice crumbled over a little raw ice cream too. Nut Crumble Cookies
1 small apple, peeled and cored
juice of 1 lemon
1/2 cup dates, soaked
1/2 cup raisins, soaked
-- or you could go all dates or all raisins if you prefer
1 tsp cinnamon
2 Tbl raw apple butter
1/2 tsp ground cordamom
1/2 tsp sea salt (optional)
1/3 cup raw maple syrup
1 cups almond, chopped
1 cup pecans, chopped
1/3 cup dried shredded coconut
In a food processor, I blended all the ingredients, except the last three, until smooth. Then, I stirred in the nuts and coconut and made "cookie" shapes on a mesh dehydrator screen/tray (no teflex needed). I dehydrated them @ 110 degrees for about 18 hours - but frankly, they didn't last quite that long because my kids ate them all. They are wonderful warm from the dehydrator, but after they cool, they also have a nice cookie texture and crunch.
