View Full Version : Raw Packed Lunches
I have just recently convinced my friend to eat raw for 30 days, which is wondeful.
I will be making all his food so that he doesn't have to worry about a thang !
His only concern is that he drives for a living and never takes a lunch break so basically eats and drives ; sandwiches, potato chips, cookies, chocolate, soda and all that icky stuff.
So what can I make him that is easy to take to work and eat on the go (one handed).Also some things that are not 'boring' as he calls just plain fruit and nuts tut tut.
I thought about sanwiches with raw bread but alot of the time mine falls apart quite easily.
So far I thought of almond nori rolls, almond dream bars - he loves em(would they melt though ?), apples.
A smoothie would be great but keeping it cool would be an issue unless he took a cool box to work.
BTW My friend is very skinny so is not doing this to lose weight at all.

What about pate wrapped in a romaine leaf? You could put a toothpick through it to make it stay rolled up.
I don't know how you feel about freezing, but you could always freeze half a container of smoothie and then top it off in the morning with fresh. That way it would stay cool longer.
Perhaps a gorilla sandwich? (I think that's what they're called.) It's a cucumber that is hollowed out and stuffed with different layers of things, like shredded carrot, then pate, then something else... It would be easy to eat, I imagine it would be fairly easy to make, it would use up leftovers, and you could eat it with one hand.
This may be a little more than you want to do, but how about making dehysrated burgers into meatballs instead. Then he could just pop them in his mouth.
HTH! I'm boring- I just take lots of fruit and graze on one at the time throughout the day.

What about some homemade granola bars. I do not have recipe but I saw a pretty good looking one on the site a couple of weeks ago. Hmmm, not alot of nuts eh? Can you make him some fruit leathers? The nori rolls sounded like they could keep ok at room temp while he is driving. I am thinking real hard here. Here are some more ideas: Homemade applesauce, boring trail mix, and some chocolate no bake raw cookies. Ooooh I almost forgot the kale chips. Yummo!

you can make wraps out of blended spinach and flax. They are sturdy but tasty and are great to fill with all sorts of veggies and the like.

oh my goodness! mattshor, you are a genius! that is such a good, simple idea for making wraps. i want to try that right now! thanks :) so, do you just blend spinach and water and mix it with ground flax? do you add any other seasonings/salt?

You could also make some different raw veggie soups that can be packed in a thermos and your friend can drink them straight from the container (if you make the smooth consistency types).
Strawberries are very portable and can be eaten very easily--just grab the stem and bite LOL. Peeling oranges and separating the segments and storing in a baggie or container makes it easy and portable and ready to eat.
I like baby bibb lettuse and I have often made little 'bundles' of stuffing (favorite raw pate for example)--can be eaten without utensils.
You can make melon balls and store in a container--very easy to eat on the road.
