Almond Butter how do you make

I might be asking a question I already know the answer to but would appreciate that assurance!

To make almond butter can you just put the almonds through a juicer with the nut nozzle on so it comes out in butter texture? And thats it?

If your juicer supports making nut butters you can use that. You can also process almonfs in a food processor but it can easily take 15 minutes before it turns to butter and requires several pauses so it doesn't cook, so it can end up taking 45 minutes in a food processor.

Since raw almonds are banned in USA and almonds from Spain or Italy cost so much I now make walnut butter instead, it turns to butter in seconds in a food processor and costs much less.

I tried to make some in my VitaMix, but it was so dry and chalky. I guess I didn't process it long enough... Maybe I should have soaked my almonds first, but I'm not sure.

raweater - where do you source your walnuts? I've only found a 4 oz bag - and DS ate that up right away!

I have been meaning to do this with my VM... I can't imagine putting dry nuts in there. I would think soaking would be necessary, but I'm not 100% sure without trying it...

If you soak the nuts then the butter is good ofr only 3 days or so refrigerated compared to nearly indefinate life if they are not soaked. It would also go better in the food processor than blender as the blender will cook it in seconds.

I got 1 KG bags of walnuts at my grocery store but since they've redone it they only have 400 g bags. I will ask them to start selling the 1 KG bags again because they still have the 1 KG bags of the other nuts.

Otherwise I can get it at a bulk nut store nearby.
