Yes, this one is decadent and rich! It's only at 'proof of concept' stage, so you may want to play with the ingredients and volumes (though I'd encourage that with ANY recipe anyway). Have fun!


Raw Caramel Slice

A rich and heavy dessert, this caramel slice is perfect for an after dinner treat. The slice is best served a day after making for the flavours and texture to come into its own.

Equipment: Food processor, slice pan, baking paper

Ingredients:

Base

1 cup walnuts
1 cup dates
Pinch of salt

Filling

1 cup of dates
½ cup of lucuma powder
Pinch of salt
1 ½ cups of water
½ cup of melted coconut oil

Topping

½ cup of cacao powder
¼ cup of coconut oil
½ cup of dates
½ cup water

Method:

Base

Make the base by placing the walnuts, dates and salt into the food processor and blending till doughy. Place the baking paper onto the bottom of the slice pan and press the base into the pan in an even layer.

Filling (this part can be done in the food processor or blender)

To make the filling, blend together the dates, lucuma powder, salt and water until smooth, then as the mixture is blending, slowly add the melted coconut oil.
Once mixture is thoroughly blended, pour it over the base and spread smooth until it covers the base in an even layer. Set aside at room temperature.

Topping

To make the chocolate topping, blend together dates, water and cocoa powder until smooth, then slowly pour in the melted coconut oil while blending.
Pour the topping mixture slowly over the caramel layer and spread gently and evenly with a flat edged instrument like a batter scraper. Give slice pan a couple of taps on the bench to even out layers and get rid of any air bubbles.
Place slice in fridge, preferably over night for best flavour and consistency.
Take out of fridge and leave at room temp for half an hour before slicing.

Serve slices by themselves or with vanilla nut cream or caramel date sauce.

Ditto to Chris' "thank you"....

This is something to serve at a gathering for my friends who think that life as a raw vegan is to condem one's self to nothing other than carrots and lettuce. I also think this would be an healthier alternative for my friends who allow their young children to down king sized Snickers bars - a small bite-sized portion of this would be a nice snack for them....

Ok, I did and image search for 'slice pan' and then 'baking pan' and here's what I mean:

When I first came onto this forum years ago I was so confused, what was a red bell pepper, what's this cilantro stuff they speak of, and only this year did I discover what arugula was, mainly because Obama likes it! :D

Thanks. Now another question: what size? I have 8X8 square, 9X9 square, 7 1/2X11 rectangle, and 9X13 rectangle. As I said, I don't yet have a lot of experience with this raw food business, so I can't tell by reading the ingredients what size to use. Help appreciated.

Oh gosh anniez, now you're pushing it!

No, it's ok, it's just that I don't work with volumes, and just eyeball everything, so I have to translate my dashes, and pinches and pours into volumes (I end up using measuring cups while making the recipe up so I have an idea), then the slice pan, I have to translate it into inches rather than centimetres, hang on!...

Ok, I estimate the baking pan I used was 10 X 6 inches, and about 1 1/2 inches deep. Depending on how thin or thick you want to slice you can use a larger (thinner slice) or smaller (thicker slice) baking pan. I'd probably use the 8X8 one.

Rawknitster, I'm trying to find someone who will make raw goodies for ME! Haha!

I'm going to a big party at the end of summer, so i'm collecting recipes, and i this will definitly be considered!
Will ahve to find other uses for lucuma powder though, cos i cant buy a whole bag and just leave it sitting in the cupboard..

Maca might work, it would have a different taste but the consistency would be the same. I know that people do put maca in things for a caramelly taste but I find it has an underlying bitterness that nobody else seems to taste but me.

Also, if you wanted to make it extra chocolatey, you could simply sub cacao powder for lucuma. Another possibility is mesquite (if you like the taste).

Of course!

The texture and taste might change, but that's the beauty of raw foods, they stand a lot of tweaking.

If you add a little more coconut oil, or put another powder in, you'll get a similar solid consistency, otherwise it will be a little squishier, but that's not a problem.

Are you leaving it out cos you cant get it? Or you dont eat foods like that? Perhaps we can come up with a suitable sub.
