Ok, here's what I have that might work: a Vitamix (with dry blade), a Cuisinart, and a Greenstar. I've been raw for a year but have not managed to make a proper nut butter (especially tahini). My son especially loves TJ's almond butter, as do I, so I tried to make some in the Vitamix but had to add so much oil (used cold-pressed olive) that it tasted like olive oil. yuck. I wish I could use coconut oil but obviously in the fridge it would turn into a rock. Years ago I tried some in the Greenstar but it was dry and crumbly. Looking forward to knowing how you do it. I used to love tahini...

I was a tahihi-junkie too, i could eat it by the tbsp...

Now i make lots of sesame mylk, so i take the mulp and blend it a bit more and add oil and salt. It does taste a bit olive-y, but right now i don't mind..I use a hand blender and was hoping that a real power-blender would do a better job?

I'm waiting for "the answer" too!!

I've never done this myself but it is on my list. Try the Vitamix with the wet blades which pulls things through the blades, the dry blade is for pushing foods up and away from the blades which is best for grinding things into flours, etc. -- flax seeds into flaxseed meal for example. Skip adding the oils as there should be enough in the nuts/seeds themselves -- I have been wrong before. :)

Check out #5, #21 and my favorite #52 here (http://www.vitamix.com/household/products/super5000/maxnut.asp).

Enjoy!

OK, guess what? I had never tried using the tamper so violently! The video really showed him jamming it repeatedly. It worked! I made tahini! It's more solid than store-bought but true sesame butter. yea! When my raw almonds arrive I can make almond butter. I am so happy to know the vitamix really does this, without having to add oil or honey like they do at the fairs and Costco. Thanks, visorblue!
