Raw Shredded Coconut

I have tried to make coconut flakes by dehydrating coconut meat and shredding in processor. I have found this to be time consuming and not fun :) I bought some shredded coconut at HFS store today. Its desicated (dried), unsweetened and no sulfur added. The lasy working there siad she was 99% sure it was raw. What do you think?
Does anyone have a good source for raw coconut flakes?

Why does it have to be dried? I find getting a Brown Mature Coconut, peeling the back off, after shredding it, it should be fine or at least fast drying. I use to just peel the back off and munch away. I don't know if the one you bought is air or heat dried.
