Any good raw salsa recipes?

hi, this works for me. 2 tomatoes into the VM. at least one (if not 2 more) choped by hand.
1/4 yellow onion chopped tiny
handful of chopped cilantro
chopped garlic to taste (i like less, some like way more)
i sometaimes add finely chopped cukes or raw sweet corn to taste.
1/2 finely chopped jalapeno
few drops of lemon juice
i serve this with also some avocado on raw cornchips.

from my dehydrator...haha! No really, the recipe is in Alyssa's book!
it's primarily raw corn, into the VM then dehydrated. adding seasoning to taste.

I love Salsa, here is what I make:
5 or so Roma tomatoes diced
1 small onion diced
a few cloves of garlic minced
about 1/4 red bell pepper chopped up
3 jalapenos diced small
about 1 cup of corn
sometimes I add cilantro or green chilies.. depends on what I have on hand, I dice everything by hand, makes it nice and chunky, if I want it juicier I use the FP...
Allissa's book is on the way so I can get that tortilla chip recipe!!!!

Ages ago I bought a salsa maker, it's basically a hand crank food processor so you can make salsa fast and not make soup like you would in a food processor. Here's four recipes that came with the thing that are still attached to my fridge.:
Mexican Salsa (2 cups)
2 Tomatoes, red and ripe
1/2 Onion
1 Clove garlic
1/4 Green bell pepper
2 TBLSP cilantro
1 Jalapeno (or as many as you like)
Salt to taste (garlic salt, optional)
1/2 lime juiced (or 1/4 lemon)
Crunchy Salsa (1-3/4 cups)
2 Tomatoes, red and ripe
1/2 Cucumber
1/4 Red onion
2 TBLSP cilantro
1 Jalapeno (or as many as you like)
Salt to taste
Avocado Salsa (4 cups)
2 Large tomatoes, red and ripe
1/2 Red onion
1/2 Cup fresh cilantro
1/4 Cup olive oil
2 TBLSP fresh lime juice
1 Jalapeno (or as many as you like)
Salt to taste
1 Large avocado
Chop and mix everything but the avocado. Add avocado just before serving.
Tropical Salsa (5 cups)
2 Medium firm ripe papayas
1 Medium ripe mango
1 Large firm ripe avocado
2 Small Serrano chillies (or 1 jalapeno)
1/2 Tsp grated lime peel (zest)
1/4 lime juiced
1/4 Cup fresh cilantro
Salt to taste

I don't know, freezing tomatoes and some other foods really changes their consistency when thawed. I used to freeze grapes until they had an ice cream like consistency. Love them! But one batch got completely thawed out and they weren't as good as regular non-frozen grapes.
Maybe freeze-drying? :)
