View Full Version : Fast, filling, non-exotic meals?

Alissa's potato salad is an example of something fairly fast and very filling that we can find easy substitutes for for the "exotic" elements, i.e., it's hard to get jicama in my city but I substitute the jicama with the mild asian radish called daikon. Instead of tahini I just use ground sesame seeds and a bit of oil so that cuts the cost as well. So the substitutions that I've done mean for a fairly inexpensive version that is actually fairly fast to make and is very satisfying. No dehydrator needed, either! <g>

Can anyone share their recipes that fit this bill? I'm preparing food for my mom and myself but she's always asking me for heavy foods. She's a cooked fooder so she needs to feel that heavy feeling still.

why not start with a green smoothie or a savoury soup before the meal to make her feel like she's eating a lot with multiple healthy raw courses.

For a fast, easy, refreshing, and delicious meal I like to eat grapes.

Make a corn chowder or broccli soup. You could also make zucchini pasta with sauce.
Instead of sun dried tomatoes I use a handful of grape tomatoes add EVOO,onion, garlic,italian spices then toss in a fresh pitted date. This is my families favorite sauce.
Then make a massaged kale salad to go with it. Finish it up with a banana avocado pudding with a few nuts.
I make the pudding with a half avaocado (you used the other half in the kale salad) with a banana and vanilla in the mini processor. I tell my son it is nutless pistachio pudding (he is allergic to nuts)
