This is an AMAZING looking cupcake recipe, you are gonna blow everyone away with this!! It looks absolutely fantastic!


Raw Choccie Cupcakes:

1 cup walnuts, unsoaked
5 Medjool dates, unsoaked, pitted
1/8 cup unsweetened cocoa powder
1 teaspoon coconut oil, liquid form
1 teaspoon vanilla extract
½ teaspoon almond extract
¼ teaspoon sea salt

Process walnut and dates in a food processor until mixture sticks together. Then add in the coconut oil, then the cocoa powder.
Add sea salt, vanilla extract and almond extract.
Roll small eight balls out of the mixture and place each one in 1 ¼-inch baking cups.
Mold the sides of the baking cups around the balls and form into a cupcake shape.

COCONUT ICING
1 cup coconut pulp
½ cup agave nectar
¼ cup coconut water
½ teaspoon vanilla extract
dash of sea salt

PINK ICING:
1 tablespoon coconut icing
¼ teaspoon beet juice

LIGHT GREEN ICING
1 tablespoon coconut icing
¼ teaspoon liquid chlorophyll

CHOCOLATE ICING
1 tablespoon coconut icing
½ teaspoon unsweetened cocoa powder
¼ teaspoon maple syrup
¼ tablespoon unsweetened coconut flakes, for garnish
1. Puree coconut pulp, coconut butter, agave nectar and water in the blender until you achieve a smooth consistency. Add vanilla extract and sea salt.
2 . In three small bowls, place 1 tablespoon each of the coconut icing.
3. In the first bowl add the beet juice and mix until the icing turns pink. In the second bowl, add the chlorophyll to the icing and mix until the icing turn light green. In the third bowl, add the cocoa powder and maple syrup to the icing, stir until it turns a dark brown.
4. Pour the remaining coconut icing in a glass bowl and cover with plastic wrap.
5. Frost the cupcakes with the coconut icing

This looks awesome. Am I missing something or are some of the ingredients in the Raw Choccie Cupcakes part never mentioned to be added to the recipe like the cacao and coconut oil?

I'm sorry but I'm not sure if I understand what you mean, but do you mean that cacao and cocnut oil is missing in the recipe?

No, the cocoa powder and coconut oil are not in the recipe instructions.

They're in the ingredients list but missing from the process instructions:

Oh, haha now I see what you mean, of course! Now the recipe is fixed! Thanks for noticing that it was missing guys!


There is also several versions of these cupcakes, bigger ones! I will post the recipe later if there is an interest for it!

Just made these today... Yum! I made the brownie bliss balls before, but the coconut butter and extracts make these so smooth and creamy... simply DIVINE!

I just made them, I doubled the recipe since I knew it would be good, I should have tripled it! I added more dates though since I wanted them sweeter. I also just made plain coconut icing by blending coconut butter and agave (I didn't want to use water so they would be storable at room temperature).

I also just bought a pan for 24 small muffins since these are so rich I don't want them to be too big.

RawNorwegian at least have the courtesy to say where you got the recipes and pictures from, and give proper credit instead of trying to pass it off as your own. Some of these pictures also come from either Shannon-Marie's Rawadorable blog or Fairygirl's blog.

I really don't find this kind of action acceptable. It's disgraceful and dishonest.

Shame on you! I'm disgusted!

I've seen them on Fairygirl's blog the exact pictures with the same background etc.

What?? I never claimed that the recipe was mine! Wow, judging a bit quickly Kyrie.. ! At least ask before shooting.. If I was to say that I came up with the recipe, THEN you could have shot me.
