I decided to try a nut free cracker and have 3 layers of flax,tomato,red pepper,onion,garlic italian seasoning crackers. First try at them.
In a few minutes my garlic kale chips will go in.

I bought the 9 tray Excalibur last weekend, brought it home, filled it up with all kinds of goodies, started to dehydrate, and nothing happened. It did not work!!! I had to call the company, and they said they would have to send me a new motor for the fan and heating something or another??
I am not very happy since I just spent over $200 and it didn't even work 1 time. I asked for a new one, since this was going to cause the dehydrator to not be really brand new, but they said no :confused:
He was mailing it out last Tues. and it still has not come yet.

Do you think I should press the issue, and make them give me another one?

Thanks and as soon as I get my dehydrator, I think I want to try some type of crackers and bread, and those yummy kale chip :D

I'm mixed on this. Where did you buy it? Have you contacted them? Getting a new motor and whatever is still new, the moment you turn it on it's no longer new so I wouldn't stress it. Mostly this depends on whether you are capable of doing the replacement yourself, etc.

Me, personally, I'd prefer getting the parts and instructions as I can probably do the parts replacement and be dehydrating faster than boxing up the unit, taking it to a shipper, shipping it to Excalibur, waiting for them to get it and verify the problem and then repairing or replacing it and shipping it back to me. Also, who pays for shipping?

Right now my dehydrator is empty and it's too quiet in here. :)

However, it has been busy of late making seasoned Pringles/crackers (may make more today), warming marinated portobello steaks, peppers, smashed cauliflower and chives, jalapeno burgers, meatless meatballs, etc. It's been filled with Roma tomatoes that were on sale, apple, nut and raisin cookies, onion bread... Soon, I plan to make onion rings, raw pizza, tortillas and a host of other things. I have six raw food prep books to read and work through. :D

Recently I bought a Pyrex 9" x 12" x 2" baking dish which is 15" wide at the handles and slides right into my Excalibur. So I can use it for larger dishes that would be a bit messy for trays -- raw-sagna comes to mind.

Okay, silence is killing me, I'm running low so I'm going to make some spicy Pringles now.

By the way, I like using parchment paper for Pringles/flax crackers, I don't have to flip them.

I just got the UPS package, with the replacement parts, and directions that have 29 steps, that include taking the whole thing apart, and very detailed directions. I'm not sure if I should even attempt to do this, what if I mess it up more? I think I will get my 15 year old son to see what he thinks.
I just don't like that I spent this much money, and worried that there may be problems from here on out.
I will keep you posted ;)

Sure, bring a DVD over and we can munch and watch.

I haven't tried kale chips yet, I may not be buying the right kale for them either -- I use mine in smoothies. I get the curly stuff. Last bunch is very curly.

The Pringles are your basic flax crackers except I use my Vitamix to pulverize the seeds (coffee grinder would work, too) and then add water until the mixture is semi-thin. Then I can spoon it onto the sheets in circles, ovals, blobs -- I did some of each after posting that message. No spreading or cutting this way. Saw a guy make them on Youtube and adopted that way of making them. Much faster.

For you, sprinkle some salt on the shapes before putting it in the dehydrator.

I made a batch that had a heck of a lot of flavor and some heat in them. They over powered the guacamole I made big time. Had to make a more subtle batch for the dip and ate the others plain.

I'm sorry but that's ridiculous!

They should ABSOLUTELY send you a new one! You didn't even use it once!

I would make a big stink about it, personally. I own a small company and also do customer service for another company and we would never treat a customer that way. That's terrible.

You're making me nervous to buy an Excalibur! :eek:

As for everyone's list of foods...yum!

Cheesy Curly Kale Chips and 2 kinds of crackers made with the pulp from almond milk and carrot juice, one spiced with curry, the other with coriander and cumin.

Sorry to read about Excaliber troubles. That is not right. You have the right to a working model before the warranty should be applied. Have you noticed that the prices everywhere are all about the same? That is because Excaliber won't allow their products to be sold online any cheaper than they sell it themselves.

I agree, I am going to call them tomorrow, and insist on getting a replacement. We sat down tonight to look at the directions, 29 steps, and basically it was taking apart all kinds of wires, and using wrenches, screwdrivers, etc.. I don't think an everyday run of the mill type person would have a clue how to do what they say to do. It is crazy, and I'm normally a very calm person, but I REALLY want my dehydrator!!!!! :mad:

I will update everyone tomorrow. I hope I'm not high jacking the thread.

Use: 1/4 cup EVOO, 1/3 cup Nama Shoyu, 3-4 Cloves of Garlic, & Ginger...Blend & Put in Mushrooms...YUMMY

I like to dehydrate mine cuz they are GREAT warm... Then, just cut up and add to a simple Salad!!! Enjoy!!!

I've got the famous onion bread going in mine. Hubby just took a nibble and said it tasted like onion rings!!! He had a devilish grin, too. I think I might have to hide it when it's done...if it even makes it out of the dehydrator. hehe

In D1 I have pizza flax crackers & sweet potato fries. D2 finished up the choc. macaroons earlier. :) I haven't had anything heavy for days (was just having oj and smoothies for the most part) and had one of those macaroons..... man, between me and two of the kids, they sure went fast! ;)

I do something similar (less the EVOO). Used to marinate in a gallon plastic bag for 2-hours and then dehydrate for 2 hours and liked the results. I was in a hurry one day and stuck the plastic bag with the mushrooms and marinade in the dehydrator for 1-1/2 to 2 hours. Worked wonderfully well. Now it's the only way I do them.

Which doesn't sound like you got it from Excalibur themselves. I'm curious of why the place that you bought it from didn't give you another or handle things for you.

I'm curious and awaiting to find out what's in yours when this is behind you. :)

I wondered about the potatoes. I've not had good luck with yams yet -- store didn't have sweet potatoes. First batch was too think from my mandoline in the smallest setting. So I sliced another batch real thin with a spiralizer but they broke up so I had chipettes like the bottom of a bag of chips, tasty but too small to appreciate. I really should try again soon.

Visorblue - don't you worry about heating the plastic and the potential for leaching bad stuff into your food.

In a microwave or to boiling, maybe. To 105-degrees in a dehydrator no. The plastic itself bothers me a bit though.

Olive oil might help, it'll slow the dehydrating by a lot though. A bit of lemon juice?

I'm thinking of running the sweet potatoes/yams through the food processor with the seasonings, etc. to a thin paste consistence and then spooning the mixture on parchment sheets to see what I get.

I'm reading the book now but I'm in the front, haven't looked at the recipes yet.

I've had maybe 3-minutes of Spanish and "pico de gallo" means "rooster's beak" or peck (bite) of the rooster. Never understood how it changed to refer to chunky salsa. :D

The company I bought the dehydrator from said they would "try" to fix it if I mailed it back to them, but they didn't have any new ones in stock.

I called Excalibur and again told them that I wanted a replacement (very nicely) I talked with a manager and she said she would get back to me. She called me the next morning and said that a new one was being shipped out to me, and a return label would be sent for me to return the broke one. I was very happy and excited!! It still isn't here yet, probably not till Monday or Tues. But I don't mind waiting since they are sending me a new one :D

Now what should I start with first??? ;)

There's the big glitch in this. The original dealer, who made the commission on the sale, should have stepped up and helped you out on this. They could have contacted Excalibur and taken care of the exchange for you. The fact that they didn't, only had the one unit you purchased, and only after you got the parts mentioned that they could try and fix it bothers me. How long have they had it and did they know it needed servicing before selling it to you?

I think I know who you spoke with. They're really nice and helpful people at Excalibur which is why I was surprised with what you were told initially.

I bought mine direct from Excalibur and thought I wanted a 4-tray model since I'm single and don't have a lot of counter space, anyone else would have sold me the 4-tray unit and been done with me. I told the lady I spoke with I was just getting into raw food and wanted to use it for a few things I'd read about. She went out of her way to answer all of my silly questions about dehydrators and even answered my raw food ones, which surprised me.

She told me that the 4-tray and the 9-tray models take up the same amount of counter space but the 9-tray is just taller, and that I don't have to fill the thing up to use it. I changed my mind and bought the 9-tray one and a Pryex 13" x 9" x 2" baking dish that's 15" handle-to-handle and fits in nicely. I'm really glad I got the bigger one as I've used all 9 trays several times, plus removed some of the bottom trays so a glass bowl would fit inside to warm up some things while the upper trays were occupied with other things.

Anyway, the dealer should have made this an easy experience for you, but I'm glad it's taken care of.

Everything! You have nine trays waiting for stuff. Flax crackers are an easy one, make your own sun dried tomatoes, sweet potato chips -- then you can tell me what I'm doing wrong, almond Mediterranean bread, onion bread and whatever is in Alissa's book -- I haven't made it to the recipe section yet. Enjoy!

Yes, I agree with you that the original company should have fixed the problem. They are a well known company, and they would normally have more dehydrators to sell, but since the homeschool conference, they were out. Since they did not have any, she said that they could try to fix it, or I could send it back, they would contact the company, and then get a new one shipped out. Once I talked with Excalibur, they told me almost the same thing (contact the company I bought it from, they would take it back, send it back to Excalibur, and then ship me out a new one) But since I had proof of purchase, Excalibur decided to save me those steps, and just go through me instead of the other company. Does that make sense :D
And, yes she was very nice, we even started chatting about other things (kids and such) I'm sure they can fix whatever was wrong, and won't have any problem selling it. I am thankful for their help, and I would recommend their company to anyone.

Now hurry up already and get here ;)

While you wait you can start collecting those recipes you had to pass on until you got a dehydrator, start buying groceries, soaking nuts and seeds, etc. If you get real ambitious you could probably even fully prep some things and refrigerate or even freeze them.

You can read the manual and especially the enzymes and thermostat control article, (http://www.excaliburdehydrator.com/enzymes_and_thermostat_control.htm) something that people seem to misunderstand.

There's a raw food video or two here (http://www.excaliburdehydrator.com/media.php) and the others might be worth watching as well.

Did you buy any Paraflexx sheets? If not you might want to get a roll of parchment paper.

Do the above and before you know it it'll be Thursday or Friday and the unit will still be in the box as you've been too busy to open it. :D

Red leaf lettuce is in mine right now.

I made a jalapeno pate and rinsed some red leaf lettuce as wraps for lunch. They seemed a bit damp even after the long ride in the salad spinner. So I decided to give them a few minutes in the dehydrator while I cut up the veggies that will go with the pate. :)

(I'm afraid of paying for it and then not using it as much as I think I will...)

I'd get the one you want. That usually makes me happier because I'll eventually end up getting it anyway. Its cheaper getting it first than buying assorted other things to make do while wishing I'd gotten what I wanted, assuming I can afford it, in the first place. I went through three juicers before getting one I wanted. Gave one away and sold the other two.

On the other hand, if you're the type that buys things and doesn't use them, then not using a $50 unit might sit better. Of course you could easily resell the Excalibur if you decided to, probably get most of your money back, too.

I love mine. I mentioned previously that I like the tray and door design of it as I will remove a bottom tray or two or three to fit larger items and often put bowls of things in it to warm. I have a Pyrex 2" deep baking dish that sides in it so when I get ambitious I can use it -- like maybe for a raw food potluck meet-up as soon as I gather the nerve to meet a group of strangers and subject my food to scrutiny. :eek:

Hopefully, whatever one you get you'll use it a lot and post lots of things for us to drool over. :)

I made some Granola and I'm dehydrating it so that it will be firm...

I also made a Lasagne for Lunch and it's "warming" in the dehydrator with a Marinated Portabella Mushroom. I'm gonna have that with the Broccolini Salad Marinating on the counter!!!! YUMMY!!!!

I made some onion bread with lots of tomato and basil for use as pizza crusts, at the suggestion of my 3 year old. :D

VisorBlue, you were right, I didn't have time to prepare anything for my dehydrator, and it arrived yesterday. Our grocery bill has been crazy the last few weeks, so I cut back to simple raw foods, and making sure I get my fruit,salads, and nut free pesto ;) I have been out and about the past week as well, so I need to throw some fruit or something in there, just so I can try it. I really want a cracker, or some type of bread. That sounds really good.
I will update you when I make something, just pray when I plug in the new one, that it will work!!

Basic flax crackers are really fast, cheap, and easy to make. This is the recipe to the first batch I made, Super Yummy - Italian Flax Crackers (http://karenknowler.typepad.com/living_in_the_raw/2006/03/superyummy_ital.html).

We have that big graduation party coming up this Sat. for my daughter, so I've got a lot to do in the next couple of days. But they would be good to take to the party with some raw hummus or some type of dip.

Nope. Not in that recipe. You could do some if you like. I paid $7.50 for a 4oz. bag of flax seed crackers locally at a farmer's market -- they weren't ground either. Wanted to see if I liked them, I did. Much better than the price. :)

I made a batch with so much flavor they overpowered my guacamole...by a lot! Quite good, but alone.

I make a version that's made up of ground flax seeds and I make it pretty watery, that way I can spoon them on the trays into chip-like shapes and skip the mixture spreading entirely. Either way, they're good.

At least plug the unit in and turn it on to! :D

I'm currently making jalapeno poppers. I got the recipe from the site Gone Raw. It's basically a pound of jalapenos sliced in half stuffed with a yummy cheese dip. They've been in about 10 hrs now. I tried one and it was pretty good. I LOVE that cheese dip. The person who posted the recipe said he usually keeps em dehydrating for 24 hrs, so I can't wait to see how they turn out.

I have a whole tray of jalepenos in right now... Well, half a tray, as I keep munching on them.
Visorblue, you can just stuff fresh, raw jalepenos with "rich cheddar sauce" and pop them in the D. That recipe (rich cheddar sauce) is here and at gone raw if you search.
They are outrageous.
You can also do a poblano pepper.
I like to sprinkle and press some raw nut burger mix into a poblano, maybe throw in a few leaves of spinach, and then spread rich cheddar sauce on top, then dehydrate 'til warm and soft. Top with pico de gallo and perhaps a little avocado. OMG, mmmmmm.

I just removed my second batch of Russell James' Mediterranean Almond Bread (http://therawchefblog.com/the-best-thing-since-sliced-bread). I had to make a few minor tweaks (less lemon juice and spices) and I have to say this is my favorite bread recipe so far. And what's also great is that is uses nut pulp!


I cut the lemon juice back from 3T down to 1T. Total spices I used: 2T Herbs De Provence. But when that spice is used up, I'll use the same amount of Italian Seasoning. (I don't use HdP fast enough to buy it again).

This is the 'most bread-like' tasting dehydrator bread that I've tried. Thank you Russell! *Ü*

I am soaking almonds and cashews at the moment and they'll go in this evening.

I haven't made any breads besides this and the famous onion bread. I used an Emeril recipe for the Herbs de Provence (sans lavender) the first time but went to a CostPlus and found a large bag of it for $2. Wow.

I am so pleased that my ancient 10-cup food processor will handle the whole batch so I don't have to half it like in the recipe. Makes a heck of a nice sandwich bread. Yes, I should try others as well.

I have a whole tray of jalepenos in right now... Well, half a tray, as I keep munching on them.
Visorblue, you can just stuff fresh, raw jalepenos with "rich cheddar sauce" and pop them in the D. That recipe (rich cheddar sauce) is here and at gone raw if you search.

Never made a cheese sauce (hey, I'm still a newbie) but plan to. Guess I'll search as this sounds yummy.

I haven't made any breads besides this and the famous onion bread. I used an Emeril recipe for the Herbs de Provence (sans lavender) the first time but went to a CostPlus and found a large bag of it for $2. Wow.

I am so pleased that my ancient 10-cup food processor will handle the whole batch so I don't have to half it like in the recipe. Makes a heck of a nice sandwich bread. Yes, I should try others as well.


Russels breads are amazing - haven't made the onion bread (Amsden?) one yet.

Would love to get the recipie for garlic bread like the one they make at Au Lac !

Yes, the famous onion bread is from "RAWvolution" by Amsden, but there's almost an identical recipe in "I Am Grateful" by Terces Engelhart called "I Am Original" that adds agave to the recipe.

Going to be filling mine with nuts shorty. I keep forgetting that it's best to soak the nuts to release the enzyme inhibitors and then dry them before just snacking on them. I'd been making a basic trail mix of assorted nuts and raisins and someone reminded me to soak and dehydrate them first. So, my dehydrator will be filled with nuts shortly.

I did my first batch of kale chips last nite, but i think I put too much EVOO???? I dehydrated them on 110ish for about 17 hours and they are still really oily....VERY tasty tho :p I did one batch w/just himalayan sea salt and another w/nutritional yeast! I also did a couple trays of zuch chips..... one w/nutritional yeast and one w/nama shoyu..... those are still dehydrating!!! YUMMMOOOOO!!!!!!!!!!!!!!!!!

p.s. - are kale chips supposed to be greasy and oil coated after they dehydrate?

I sliced some sweet potatoes really thin, chopped up some broccoli and purple cauliflower YUM YUM!!! I put some on my salad tonight, to give it that crunch. My 15 year old wanted to eat all the broccoli:rolleyes:

Tomorrow I want to do some fruit, like bananas, apricots, apple, and whatever else I can find. My question is do I need to use the Teflex sheets or can I just use the screens? How do I know when to use the Teflex sheets and when I can just use the screens?

I used the Teflex sheets tonight for the cauli, brocc, and sweet potatoes, it worked but I may not have needed to use the sheets??

Mine is full (9 round trays) with zucchini and yellow squash slices with Spike sprinkled on top. My children love these and I can't hardly keep them supplied these days. I usually use sea salt, and I've also sprayed them with Braggs, but I wanted something a bit different this time.

I can't wait for my Excalibur to arrive, my dear sweet husband bought me one for my upcoming birthday and it is in the mail now! Then I will have 2 dehydrators to use until my trusty old garage sale one gives out on me.

I use the teflex sheets if I have soaked the food in a marinade, for wet things like flax crackers, breads...that would drip all over the place otherwise. For fruits, tomatoes, cookies, etc...I put them on the screens. It lets them dry faster. :)

Simple, if it's sticky, messy, liquid, etc. and would clog the screens or drip, use the Paraflexx sheets. The Paraflexx sheets don't let much air circulate on the bottom so you'll want to flip about halfway or so through the process (most recipes will tell you when to flip) onto another tray with the screen on it and then peel back the Paraflexx sheet.

To flip, basically, you make a tray sandwich. You have the tray with the food on it on the bottom, place another tray with the screen on it on the top and then flip them over so that the tray with the screen is on the bottom and the tray with the Paraflexx sheet is on the top. Remove the top tray and gently peel back the Paraflexx sheet.

Note: If you ever find that too much of your mixture (like a bread or something similar) is sticking to the Paraflexx sheet then it needs a little more time. So smooth the sheet back down and put the tray back into the dehydrator for another hour or two (or ?) more. To be clear, at this point whatever you're making will be flipped onto a screen and the Paraflexx sheet will now be on the top as you put it back into the dehydrator.

Unless you put something on them like oil, agave, a sauce, etc., no the screens would have been fine. A good place to store the Paraflexx sheets is on the bottom of the dehydrator, that way they'll catch any drippings, etc. making cleanup easier. I use parchment paper, too.

Excalibur Tip: You can also use the Paraflexx sheet on the tray without the screens. Example, if you were making a fruit leather or wrap. Without the screen you gain a bit of depth and can spread the mixture right up to the very edges of the trays, giving you nice corners and edges.

I had a horrible night, and even today I have not been able to eat anything due to the pain in my stomach, gas, bloating, etc.. that I get when I eat something that my digestion system doesn't like.

I'm assuming it was one of the foods I dehydrated (broccoli,cauli, or the sweet potatoes) because the rest of my diet was the same yesterday, and I have been doing really good with my stomach issues. I did not eat a lot of the dehydrated foods, but I guess whatever it was didn't take a lot to cause
pain :(

I guess what I'll do is add only one food in at a time and see if I get a reaction. I was going to start adding in soaked nuts today, but I'm going to have to wait till my system settles down, and the bloating goes away. That way I will know if the nuts are going to affect me or not.

Disclaimer: I'm no expert, don't play one on TV or even on the internet.

I'd say it was the combination of foods, then broccoli can do that to some people by itself. Look in Alissa's book (p 81), search here in Raw Food Talk in one of the other sections (Raw and Living Food Discussion (http://www.rawfoodtalk.com/forumdisplay.php?f=20)?), and search the net for "food combining". I tried making that once and it just didn't work out. Looked pretty good but the oil kept it from drying. Curious of your recipe, too. I'd love to make some EBLT wraps. I even bought a bottle Bacon Salt (not raw) to try next time.

Am writing a review of Everyday Raw by Matthew Kenney for my blog (Raw+Simple (http://www.rawsimple.com)) and made the eggplant bacon as a featured recipe. I let it go in my dehydrator for 48 hours.

I also made some sprouted hummus and put the two together!

Well the problem we are having is......
We are eating the food 1. Before it's all the way done and 2. if we don't eat it before it's done, we eat it right off the tray as I take it out :rolleyes:

It has not even gotten to a plate or a bowl. My 4 kids and I are eating it as fast as we can take it off the screens ;)

One problem I see is that one person can consume a lot of food by dehydrating. I did 3 peaches, several bananas, and I could have easily eaten them all in one sitting (or should I say standing) :D

My kids are wanting me to dehydrate everything!!!

I think I see my grocery bill going up in the next week.....

Yeah, oil is not a huge part of this really.. it does get crispy.

Its funny you saw it as an egg! I wasnt thnking that at all. I didnt even try to simulate an egg.

I would like to see if I can find "natural" ways of making the "eggs" so as not to negate the goodness inside! (eg: organic spring peas but coagulated with harsh or industrial chemicals). Its not the biggest priority tho ;-). Am just trying to find some fresh coconut meat and have NO luck after much traveling today.

Just visited my nearest health food store to find it MUCH smaller and way not the same - now I think I am going to have to buy just about 100% online - and I WANTED to support local people. The driving is killing me tho.

I took my new Ronco dehydrator out the box last night and today made "raw vegan carrot cake cookies" as my first thing. I hope they turn out!
I took all the trays out because the instructions said things dry quicker with less trays inside, so I only have the one in and the vents are open. I think I should have put them on parchment paper but it's too late now.

No, didn't see that you took his workshop. Cool!

You're doing some interesting things both in the shooting as well as the food itself. I did some food assignments centuries ago with a food stylist and her assistant, etc. Never did any of the styling myself. Seeing quite a few excellent raw food images online. I'm impressed, digital has brought out a lot of creative people and freed them from a lot of the work. Me, I just grab a pocketcam, take a snap an post. :o


Am just trying to find some fresh coconut meat and have NO luck after much traveling today.

My source for young coconuts is a huge Mexican supermarket or Whole Foods (not close). I was told that most Asian markets should have them, too. That's one thing about raw food that's a bit hard to get used to, exotic foods you can't just run out and grab. Whoever heard of mail ordering foods?

Now, to get back to topic, last night I had "roasted" peppers and Portobello steaks and they were delicious. Tempted to make another batch tonight which will soon be what's in my dehydrator right now...er...then.

That's how I work, I go buy whatever I want for that day/meal as the mood strikes. Keeps me shopping almost daily but then everything is fresh and there's rarely a "I have to have the xyz tonight or it will go bad." occasion. Learned that from a couple Chinese cooking instructors years ago. The idea stuck with me. They shopped daily in China and said "What's for dinner is whatever was on sale at the market." Granted, I hae a refrigerator, etc., but I still like the idea. :)

It would be good to drink a lot of water with dehydrated food to make up for the water that's been removed from it. It may make you feel more full with less food too.

as for everyday raw - yum! i made the choc chip cookies!!!! holy yumminess! takes a few days, but worth it!

and yes, they are practically gone before leaving the tray...like the macaroons

Onion Bread MMMMMMMM!

I made it and put it in the dehydrator, we just kept eating it before it was ready because it was so delicious. Thank you.

Coconut breakfast bars

This is a recipe I adapted from a Carol Alt recipe.

2 cups of dried coconut
about 12 dates (depends on if fresh or not, just add a few at a time until you get the mixture to stick together)
1 to 2 tablespoons of cacao powder depending on taste
You can add some raw honey if you eat honey.

Coconut in the food processor first until its all chopped up then add the rest of the ingredients until the mixture sticks together. Put in the dehydrator for abour 8 hours.

This recipe is great with some lemon zest or dipped into raw chocolate after it is dehydrated then put in the fridge for chocolate coconut bars.

In my dehydrator is two trays of jicama salama.... basically thinly sliced marinated jicama, which we then use on our raw pizzas.

On another tray is two crepes made from young coconut flesh, apple, ground flax, cinnamon, water. Looking forward to rolling them up Sunday morning with apples, bananas, walnuts and topped with cashew cream!

I don't know how others make them, but I do it quite simply. I just massage the leaves with olive oil, lemon juice and salt. When they are very well coated and soft they're ready to be placed on teflex sheets. I always taste them first. If they taste good before being dehydrated, they will taste freaking amazing after being dehydrated.

Haha... yes, who would think something so simple would be so good? I think a good tip too for someone making them the first time is not to use too much lemon juice. I made that mistake the first time and I was really puckering up when I ate them. One good squeeze over a big bunch of kale seems adequate.

wow that sandwich looks gorgeous. i am not very good at making bread etc.. in the dehydrator at the monent i have greek (not) meat balls, (from The Raw Greek book), and Alissa's corn tortillas and some aubergine slices that have been coated with oil, pepper, cider vinegar and herbs.

it all smells rather nice :)

I make the bread recipe in a 11-cup food processor. Vitamix should work. Flax mixtures can be heavy on the machine due to the gelatinous nature of moist flax so you'll want to get to high speed quick or it may over heat the Vitamix -- cools better at high speed.

Just made a pizza crust a la the teen Boutenko's book. Made one larger crust and four smaller ones, but thicker. We thought we'd like to try out different thicknesses and crunchinesses. (Is that a word? lol)

Trying to decide what to do with the portabello's and white mushrooms. Jerky is high on the list. Maybe "pseudo saute" and stuff half the whites with something, use the others to see what happens when we make them jerky?

Honestly, I've never tried it before. I made too much smoothie this morning and didn't want it to go to waste so I just spread it semi-thin on a teflex sheet and let it dehydrate awhile. We'll see how it turns out. My first thought, though is that consistency doesn't matter much.

Well, it finished dehydrating a bit ago and I ate it already. :D It was really, REALLY good. The smoothie consistency was really smooth and pretty thin as smoothies go. I used a total of about 5 cups of greens and fruit to 3 cups of water in the blender, if that helps at all.

I'll definitely be making these again. I'm thinking I may toss some green smoothie in the ice cream machine next time too. I'll bet that would be really good.

Man! ALL of this stuff sounds and looks awesome! I don't have anything in the dehydrator at the moment, but tomorrow I'm doing some black sesame seed-yellow+orange pepper crackers. I've made these before, and these are a staple, with whatever color peppers I have on hand. Happened to get several orange and yellow peppers pretty cheap at one of the produce stands I go to here in SF. Lovin' it!

Well, it finished dehydrating a bit ago and I ate it already. :D It was really, REALLY good. The smoothie consistency was really smooth and pretty thin as smoothies go. I used a total of about 5 cups of greens and fruit to 3 cups of water in the blender, if that helps at all.

I'll definitely be making these again. I'm thinking I may toss some green smoothie in the ice cream machine next time too. I'll bet that would be really good.


Contessa, thanks for remembering to post back. Your smoothie recipe is so close to what we normally use. I just never would have thought of making a roll-up. I can't wait to try them. From the timing of your posts, that might have been 2.5 to 3 hrs in the dehydrator. Sounds like we can really crank these out and end up with something portable! I haven't told the guys here about it -- this will be a neat surprise! :) Thank you!

You're very welcome, Soose. Yes, I would estimate they were in the D for about 3 hrs. on the lowest setting. The center was still a teeny bit tacky so they probably could have gone another hour or so but I was really, REALLY hungry at the time. :D

In Edwin (my dehydrator) at the moment is a version of Matt Amsden's Onion Bread, Ani Phyo's Breakfast toast and Berry Breakfast bars. Im hoping to feed my other half raw for one meal a day this week and Im hoping he will eat the berry bars in place of his usual oaty fruit bars whose name completely escapes me at present.

I made some fruit roll-ups with the green smoothie leftover from breakfast. Just served one after lunch. They were received with enthusiasm. My own critique: I made them way too thin, microns thin. rofl. They wouldn't roll. I'll have to work on it.

Also in the dehydrator this morning -- will see if the family wants to honor it with a name :D (ty Fee) -- the pizza crusts we made yesterday and toppings for it.

woo, hoo... been experimenting with about 50% raw (eat supper with family) for about a month and have lost about 16 lbs!

right now in dehydrator is nutless med bread!

I'm a newbie here, today is only day 5. I'm still trying to figure out my dehydrator as far as making the crackers. The ones I made yesterday, the Flax Seed and the Corn Chips that Alissa gave recipes for in her book, didn't turn out so great. I think I made them too thin??? They tasted great,(even my 9 and 10 year old children loved them!) but turning them over for the last couple hours was a mess and I wasn't able to even turn the Flax Seed ones as they were stuck tight, only coming up in crumby pieces. Any help on this? How thick should I spread it out on the sheets?

In right now are simple apple/nut cookies with coconut on top. Soon I'll be making more onion bread and flax Pringles. I like parchment paper better than the non-stick sheets for the cookies and Pringles, they dry on both sides so no flipping.

2)Mushrooms marinated with garlic, oil, nama shoyu, pepper, and chineese 5spice
3) Squash and Asparagus with oil, balsamic, salt and pepper

Yum-oooo it smells great in our kitchen already.

Now I've got an experiment in there for crackers with a cup and half of lentil sprouts, a bunch of basil, a handful of sunflower seeds, lemon juice, salt+pepper, food-processed up. I spread it out on two sheets, and am hoping for a high-protein, pesto-type of cracker/crouton thing. I was reading somewhere that if one isn't going to eat one's raw pate-like things soon enough, one can dehydrate them. I'll post when these guys come out!:

More green beans (the second large bag).

Just tried our first raw cookie - carrot cake (so to speak). I was looking for recipes here and winged it in the end. I think I'm understanding we can take the carrot pulp and an equal amount of something else, put in any seasonings, something to sweeten, something to hold it together, any additions like nuts, raisins. That's the kind of recipe guidelines that are so useful to me.

1/2 cup carrot pulp from juicing (my old one is rather wet)
1/2 cup ground pecans [version 1] or shredded coconuts [version 2]
(my husband does not like shredded coconut, at least the normie version)
1/4 cup sweetened dried cranberries
1/4 cup applesauce
1/4 cup honey
1/4 cup chopped pecans (in version 2)
allspice to taste (my son is allergic to cinnamon)

Each version made 7 cookies, 1/2" thick by 1.5" to 2" before dehydrating.

(Making small batches to see what we like. I actually took one cookie of one recipe and made two very thin ones to experiment.)

I think I figured out if we like the taste before it goes in the dehydrator, we'll like the results.

Yes, as a snack. And a filler while I"m figuring out more raw foods. I'm making them from frozen green beans.

First I tried them coated with olive oil and salt then dried. They went over well. After that I thought I'd dehydrate them first then coat them, and maybe it would be less messy in the dehydrator. But as it turned out, they get eaten before I get around to coating them. And as addicted to salt and oil as I think my son is... if he'll eat them without, we'll just keep going as is. :)

I was going to ask if anyone had ideas for marinades or spices or coatings other than oil and salt?

The last two batches have not been as flavorful. I'm going to look for a better source.

... made with carrot pulp, natural pb (must find a raw source for all these nuts, this was just part of a leftover jar), honey, a little homemade almond butter left over. I think I could have added some dates as they are not sweet now they're drying.

The carrot pulp is a great starter for many dehydrated foods. So pleased with that! :)

Interesting you mention parchment, I still have to order my teflex sheets, but I've been using silicon baking sheets for the time being. I had read an article before I got my dehydrator about someone using wax paper and it didn't work too well, as you can imagine. So I have shied away from using parchment as well (for some silly reason)... I'll give it a try now, thanks for mentioning that!

How do you make your pringles? I'd love to know the recipe, getting the munchies just thinking about it! :)

Sprouted sunflower seeds. I just took the sprouted buckwheat out of there and have mixed it with dried coconut, chia seeds, flax seeds and currants.

I'll add the sunflower seeds to it when finished, then I add dates and bananas at every serve (with a generous splash of almond milk).

I've got all nine trays full!:D My daughter is going to bible camp and she has been raw since July 4th. So mom is doing her best to help her make it through camp staying raw, even though the only raw foods she will most likely see will be carrots and celery, some sliced oranges, apples, and bananas (and she is allergic to bananas!), and some iceberg lettuce salad.
I have already made flax crackers, and now I have two trays of Russell James' meditteranean bread modified to be less spicy so she can have raw PBJs, four trays of pizza crusts, and three trays of raw granola. Whew!

I bought the 9 tray Excalibur last weekend, brought it home, filled it up with all kinds of goodies, started to dehydrate, and nothing happened. It did not work!!! I had to call the company, and they said they would have to send me a new motor for the fan and heating something or another??
I am not very happy since I just spent over $200 and it didn't even work 1 time. I asked for a new one, since this was going to cause the dehydrator to not be really brand new, but they said no :confused:
He was mailing it out last Tues. and it still has not come yet.

Do you think I should press the issue, and make them give me another one?

Thanks and as soon as I get my dehydrator, I think I want to try some type of crackers and bread, and those yummy kale chip :D

The same thing happened to me, and the company was wonderful in the long run - don't give up. If the new fan does not solve your problem, ask them to send you a new unit. That's how it went for me - the second fan did not work, so they sent me a brand-new unit with a free return postage label.

Since then, I have been dehydrating almost daily.

Well I took out the buckwheat bread this morning. Just had a piece with almond butter and a bit of honey. It was good. Not great but maybe the best "bread" I've made yet. I don't like the apple flavor for some reason but I could just leave them out next time. One tray obviously had less on it cause it was a little crispier so maybe they will be crackers!!

Do you notice how sometimes recipes are so out of whack?

Like the recipe called for 3 cups sprouted buckwheat and then in brackets it said 2 1/2 c dry unsprouted:eek: I followed Alissa's sprouting guide and used 1 1/2 cups and even that was way more than 3 cups once it sprouted. So here I am left with about 2 cups of sprouted buckwheat. And it says to process everything but the flax seed - well I have a large FP and only about 1/2 the stuff fit even before the flax seed so I had to do multiple processings.

Anyway - I seem to find this often with recipes. Just venting. On the plus side I found a trick. I had poured the stuff on the teflex sheets and was about to spread it (messy job usually) and the phone rang. I didn't get back to it for 15 minutes and it was so easy to spread. Didn't stick to the spatula at all. So there's a hint for you.

A big ol' batch of my raw granola featuring sprouted buckwheat, coconut flakes, diced granny smith apples, pumpkin seeds, sunflower seeds, almonds, bound together with a paste made of blended soaked dates, blueberries and strawberries, accented with a hit of cinnamon. I'm making some dehydrator goodies to send ahead of my trip next week to Florida to visit my old best friend who I haven't seen since '86, but in the last nearly 2 years we've been corresponding by e-mail, and she's interested in raw and in fact eats quite a bit herself, especially after my encouragement. We'll have goodies to share. She doesn't have anything other than an old blender, hence the making ahead of a few dehydrator things that will ship well. She had enjoyed my black sesame seed crackers(I did those yesterday)and my granola before when I sent along samples.

I've been cranking the dehydrator all weekend in preparation for starting 100% raw today.
I just took out a batch of Middle Eastern spiced pistachios, apple/mango/banana fruit leather, garlic cheesy kale chips, and Cinnamon Buckwheat crispies. Right now, I've got a batch of Cafe Gratitude's granola in there, along with more cheesy kale chips (although I added cumin and chili powder for a nacho flair) and some spicy corn chips.

Having recently begun a fast, and finding some food in the fridge that may not survive the duration, I resorted to drying it to preserve it until post fast. I use a four tray dryer and two were occupied with sprouts and citrus wedges.

This filled the other two trays. I took 8 or so brussle sprouts and peeled the leaves apart. Then I broke a fist sized clump of cauliflower into tiny florets. I marinated them in this recipe:
All ingredients may not be raw (thinking the sunflower seed butter, oil, and agave were not) but it's what I had to work with, and they are close estimates...I didn't measure each ingredient.
1/2 oz. coconut vinegar
1/2 oz. coconut aminos
2 oz. grape seed oil
small handful chopped mung bean sprouts
1 T. sunflower seed butter
1 t. flax meal
1 t. slippery elm
1/2 t. agave
2 T. aloe vera juice

I only wish I could taste them but that will have to wait. They smell great.

4 trays FuLL of these little gems, Rainbow Flax Crackers (http://thesunnyrawkitchen.blogspot.com/2009/09/rainbow-flax-crackers-ebook-sale-and.html). These are the best flax crax I've made. And they smell so darned good. *Ü*

Ooooh, these sound divine! I'm not sure how I overlooked those on her blog! I'm going to try these. What did you use as the poultry seasoning?

I'm dehydrating some tomatoes that were starting to get soft, that I couldn't eat up quickly enough. *Ü*

I have to remember to do this, I've let too many things go bad because I couldn't get to them quickly enough. :o

This works really well for tomatoes that are getting soft... I hate to toss things, even into the compost pile ~ ~

I just took out a double batch of Ani Phyo's Black Sesame Seed Bread. Before that it was 5 trays of pumpkin seeds that I soaked overnight. *Ü*

Just put in 2 trays of cheezy kale chips, 2 trays of Bar-B-Q kale chips, 1 tray of cheez its and 1 tray of salt and vinegar zucchini chips! *salivating* I'm waiting for my walnuts to finish soaking (a little less than 2 hours to go) so I can put in some jalapeno burgers! Gonna be some good eating this weekend! :D

As an aside though, what did you use as the poultry seasoning for your Rainbox Flax Crackers? I'm really interested in making those! They sound DELISH!

I keep tasting a few each time I open the dehydrator...oh my! They are YUM indeed! Especially the bar-b-q ones! I'd better quit "checking" on them or there won't be any left soon! :p:p

I have some flax crackers, and bananas. I am also going to making some cookies later and some almond flaxseed burgers from the book Thrive by Brendan Brazier. The burgers are for dinner tonight, and cookies for dessert!! YUMMY

I have only just gotten my dehydrator, so my first uncook was onion bread and I made carroty cookies but once made I feel they will most likely all break apart when dehydrated and make a more crinkly cereal sort of thing. Nevertheless I am sure they will be fantastic. Even when my raw cooking fails it usually tastes ok, sort of. LOL.

I am trying something out.........

Made 3 times a recipe cheesy kale-sauce...the ones with the cashews pepper and lemonjuice....put some flax though it...ground....and onionrings on top...see if it works out or not...

some leftover celery that was going limp ... I dry it, pulverize it, and use it as a salt substitute.

I'm doing a juice fast right now ... but am looking forward to revving up the dehydrator for corn chips and flax crackers for the next potluck.

I've been busy today! First time ever that my 9 tray dehydrator is full:woohoo:. I've gotten it close to full before, but not like this. Earlier I had mac & cheeze :eat and tomatoes in the dehydrator. Right now I have bagels, onion bread, cream cheeze, sweet potato chips, and pizza crust (lunch tomorrow):drool:. Can't wait for it all to be done.

I made a delicious tart curry sauce made from about 1/4 cup soaked pumpkin seeds, 1 tbs dried coconut, 3 tbs nutritional yeast, 1 tomato, 1 stick celery, 1 medium carrot, 1/4 cup coconut vinegar, ginger chunk, tumeric chunk, garlic clove, and spices (curry, cayenne, chili, garam marsala, herbamare).

I want to try using kombucha now, reflecting on the fact that kale chips loose the sour as they dry, and it would be a wonderful way to get more probiotics. :duh

Shredded Sweet potato/Yams

Shred a sweet potato/yam....(this is 2...I'm super hungry!) ....lol

Then, in a small food processor (or magic bullet..etc)....blend up:
olive oil, garlic, cut up cherry tomatoes, a little cayenne, sea salt, black pepper.....pour over the shredded sweet potatoes/yams....stir it up....eat it "as is", or put it in the dehydrator for a couple hours....this is what I do....mmmm :drool:

A marinated mushroom (Coconut aminos). I'm having pizza like all the SAD folks tonight... started a little late on my prep though.

I made the mistake of rinsing my mushroom (The minute I did it, I realized my error). Soaked it up with a paper towel as best I could, let it marinate in coconut aminos for half about 40 minutes or so and then put it in the dehydrator. Planning to leave it in for 1.5 hour, I've got just under 30 mins to go.

I've sliced up my green, yellow and red bell peppers, and onion. Got my spinach ready, a nice thick marinara and some cheez. Oh my GOODNESS, this is going to be insane!! ...just hoping my bella isn't too soggy when I take it out! :excited:

Yesterday it was Tamari almomds from Ani Phyos book. Took about one minute to mix it up and throw it in the dehydrator. Today its cauliflower popcorn, yum! and Tomorrow I'll make pizza crust for raw pizzas for dinner. My favorite raw meal of all time!!!!!

I just got my dehydrator today. All excited! This is a great forum.
What are the teflex sheets? Is that the layer over the trays?
What are the easiest recipies for a beginner?
The bad part is I don't eat nuts - so need a replacement - someone mentioned lucuma-but I can't find it yet or can I use other light 'flours'?
And I can't eat bananas, so I'll need to replace them -

My husband who is SAD, picked out a cookbook for me - it looked like he was drooling and already told me which ones he wants !
