View Full Version : What would you substitute for lentils in recipes?

It's one of the few common raw foods I can't tolerate. Stomach said no thanks. But I'm digging Alissa's recipe book and want to do a couple of recipes that have sprouted lentils listed.
What would you use instead that have the same meaty texture? :)

Can you tolerate any other sprouted bean? I would say a kidney bean or a pinto bean work the same in a recipe.

I seem to only tolerate sprouted mung beans.

I'm sure you could substitute those as well. I don't know the recipe. Are the lentils used as a thickener, in which case you could probably substitute ground flax seeds, or for their texture? There you could use the mung beans. Experiment.

Buckwheat groats have the same crunch with that slightly floury taste.
I'm in love with my buckwheat!

Yeah, I want to make the.........I think it's like the chicken things? I don't have the book handy. Maybe a mix of both mushrooms and buckwheat. I'm really on a roll with recipes right now.
