I have a bunch of dried lentils. Is there anything I can do with these?

The easiest thing is to sprout them and toss them in a salad.

+1 on the sprouting.

Soak them over night, then wash and drain them morning and evening and you should have lovley sprouts in a few days.
I have green lentil sprouts in my fridge right now. Delicious!

Sprouted lentils are amaZING!!! Ate a bunch today=instant bliss. Powerful little yummies they are.
