Anyone know what to do with raw corn meal? I bought some beautiful heirloom corn meal from a local organic farmer today . . . and I have no idea what to do with it! It is basically just ground up indian corn. Suggestions, anyone? I'm going to try soaking it and see if it is edible that way.

Maybe mix it with some ground flax, chili powder & cumin, & make tortillas? Or doesn't RFRW have a tamale recipe that sounds about perfect? Let us know how it works out!

I don't have a dehydrator, but maybe I could make tortillas with the oven on low and a fan. It's still cool out here, so that wouldn't be wasting heat.

I don't think RAW corn meal works without a little Lime and that is not the cousin to Lemon.

Mmmmmmmmmmm Lime and corn! Thanks Spicy, that sounds great! I'm going to go soak that corn meal now and see what happens. I'll pick up a lime at the coop today.

rawstrength--i think spicyful meant the mineral or whatever lime, thats why she said not the cousin to lemon ;P i think you should just try to make raw doritos or tortillas or something, but i dont know, maybe you need the mineral lime. i dont know where you would get it though and i wouldnt use garden lime .... hehe

RAWStrength, I hope you did not get the Lime to go on your Corn Meal. The only Lime that will work with corn is the Ph Lime.....it's how they make Homony. I should have explained it more.

Ok, I still haven't tried the cornmeal yet. I'll see if I can get the Ph lime.

Hmmm... Tamales. I don’t have a dehydrator either. Here's how I would try it -

Soaked raw corn meal mixed with coconut oil, a little sea salt and a hint of cayenne. Spread about ¼ inch thick on kale leaf. Now for a filling – I don’t have a walnut taco meat recipe but I bet it would be good here with some veggies and a jalapeño, or milder pepper if desired. Maybe some of Zaphira’s Spicy Nacho SunCheeze. Dollop some filling on and tightly roll up the leaves to form the tamale. Wrap tightly in food film or foil so the tamale has some pressure on the outside. Let sit in the fridge for a few hours and bring to room temp before eating. I would peel the leaf off and maybe make a quick salad or green juice with it to accompany. If the corn meal/coconut oil blend doesn’t gel enough, maybe add a gelatinous sea veggie?

You definately don't wanna eat a lot of raw cornmeal first time. Raw corn has a lot of water to help with digestion, but corn meal is void of it.

Also another poster mentioned Lime for corn meal. I've never heard of using lime (the fruit) for cornmeal, but a lot of indigenous people used lime (mineral) water in preparation of corn meal.

Most grains and starchy plants (wheat, beans, rice, etc.) aren't meant to be eaten raw. It is part of plant evolution (antinutrients) so herbivores don't eat these dense sources of plant energy.

I soak my in most any Yogurt and eat it raw with the yogurt. its great that way.
i also mix it in my steel cut oatmeals as i cook the oats.

so why wouldn't corn meal simply be fiber that way

I have a recipe in Annette Larkins books. Take corn, dehydrate, then grind up. Mix half with raw corn and then put on dehydrator flat and cut into tortilla shapes and dehydrate.
