I have been looking for raw rhubarb recipes, without success. Any reason that rhubarb is not a part of the raw diet?

My nana used to cook with rhubarb when i was little, but told me never to eat it raw... I know the leaves are poisonous, you may have to google if the stalk is or not too.

Also we always added tons of sugar and strawberries to it, so i cant see the benefit outweighing the amounts of sweets needed to make it palatable.

When I was a kid we used to peel the stalk and eat it raw :p

I did the same thing and I loved the tart flavour it has.

The way to prepare raw rhubard is to macerate it in agave nectar, with lemon juice. Macerate is just a fancy way of saying marinate. The lemon juice will soften the rhubarb as will the agave.

Now the stalks of rhubarb are edible, but not the leaves Ok!

Now I will look for the recipe for raw rhubarb because funny enough there was one in the BBC Good Food magazine a few months ago.

I won't be back on this website for a few day, very busy, but I should have it for you in a week.

I like making rhubarb pie, as there is an abundance of rhubarb growing in my yard. Chop the rhubarb very fine and remove any tough fibers. Soak it in raw honey and lemon juice for a few hours. Raw honey works better than agave to soften the rhubarb because of the enzymes in the honey.
Pour the rhubarb filling into your favorite raw pie crust and garnish with strawberries and edible flowers.

I love the stalks in smoothies. I just add one, not a whole lot, because they are tart for me. One adds a nice layer of flavor though.

i used to too... but we would dip it in sugar first :rolleyes:
