I'm hoping you all might have some tastey ideas for a cinco de mayo menu?? I have most everything for raw taco wraps, but we just had them.. looking for something different..

I made the tacos which I thought were really good. (time consuming but worth the effort). I'd like to try the quesadillas soon as those look promising.
Have fun! I used to love Cinco de Mayo when living out in Southern California. Sadly, not many folks here in Vermont are even aware of it. Let us know how your feast turns out! :)

Do you have Alissa's cookbook? She has an enchilada recipe that's really good (think the only thing I did differently was to tweak it by adding in a few different veggies and kicking in some heat because I like spice. My nieces loved them and ask when I will make them again.
