I opened a thai coconut and then decided I needed to make something. I remembered this video I saw so I thought I would try it,but I didn't have all the ingredients.
I tossed a handful of cashews(not soaked) into my mini food processor then about 1/3 cup dry shredded coconut,pinch sea salt,tsp or so of raw honey and 1 tbs melted coconut oil in. Processed it then pushed it down into a 3" round lock and serve lined with plastic wrap. Then sliced up 1 banana on top. Then took my thai meat,1/3cup coconut oil,vanilla dash, and tsp or so of honey. I processed this but blended would have been better. Scooped it out spread on top and tossed in the freezer for maybe 10 mins. Hey I wanted to try this. OMG so rich. I had 1/4 of it and that was maybe 3 tbs. This was so good. I have to give the rest away. I can't eat all of that!!!
