Hey everyone, I just began eating raw today (though not 100% yet). I've been a vegetarian for a number of years now, though.
It worked out pretty well today, though any suggestions or hints about what to eat would be much appreciated.
Today I ate (not all at once, but these were the amounts total throughout the day):
2 artichokes (these were steamed, so not raw :( )
2 cups soy ice cream (not good either, but now its gone, and i wont be tempted)
2 or 3 large apricots
salad with lettuce, jalapenos, and onion
about a quart of cantalope
I was completely satisfied (if not a bit too full) with what I ate, though the ice cream wasn't a great choice. So, am I missing anything?

protein: 50% (this is just a guess because it depends on your lean body mass)
vitamin E: 25% (i.e you reached 75% of the daily value but you need 25% more)
thiamin: 49%
riboflavin: 67%
niacin: 50%
b6: 38%
b12: 100%
d: 100%
pantothenic acid: 24%
calcium: 68%
iron: 56%
magnesium: 25%
phosphorus: 22%
zinc: 76%
copper: 40%
manganese: 21%
selenium: 85%
short-chain omega3 fatty acid: 72%
The things you got enough of were vitamin A, vitamin C, folate, vitamin K, fiber, and potassium.

Wow I've always loved that name! First off, welcome! Congrats on deciding to go raw! My very best wishes to you in your journey.
As far as 'what you are missing', I guess my question is: what are you striving for? You already know what is/isn't raw, and I understand the "just get rid of it" so you won't be tempted idea. Now it's gone and tomorrow you'll have no temptations. :D I eat lots of greens-salads, collards and spinach, smoothies, some dehydrated "recipes", and snack on almonds, carrots, apples and celery. I try not to make it too complicated, but some days I just feel like messing in the kitchen and make something wonderful. However you chose to do it, either transitioning or going for 100% right away, we're all here to help. Once you're raw for a while, your body will just tell you what it needs (with a little common sense thrown in). Some days are all fruit for me, other days all greens, some days too many almonds, but it all seems to level out.
I'm new to this myself-started in late Feb/early March, but there are tons of longtime raw people here with much more experience to share. Best of luck to you! :D
