I just got some freshly picked local organic asparagus at my farmer's market. It is so crunchy, tender and good! I am eating it dipped in guacamole - heaven :D .

I am continually blown away by what constitutes a snack or a meal when eating RAW. It is just so easy!

Right! And because it is so easy, you think less about your next meal, which in turn seems to help us "automatic" eaters eat less. I used to think about what to fix for the next meal the moment I put my fork down after the current meal. All this thinking about food doesn't help one stay healthy. So RAW is fantastic!

Oh, i definitly have to try that! I've been drooling ove the aspargus in my grocery store (no farmers market here, sadly we don't have that tradition at all) and i've go to get some!
Dipping them in guaca sounds lovley, but since a hass avocado is about 2 dollars right now, i think that's gonna have to wait until the prices drop a little...

I like to make guacamole and just eat it with a spoon. I should try it as a dip sometime though.

A bit of lemon juice, olive oil and sea salt is awesome on raw asparagus.
A nice nut or seed basedd dip like Snowdrop's ranch dressing (do a banana search) would also be good.
And the asparagus is lovely on it's own, too :cool: !

hahahaha I do the same. I will plan to dip something with it but I always end up making the guac first and well... that's where the rest of the plan stops :p

Okay, this is the second time today I've run across raw asparagus. My MIL was just now telling me about how good it was in her salad this week. Guess I'll have to find some and try it. I remember eating (and loving) it raw straight out of the fields at my grandparent's house when I was little but I never ate it after because it was always steamed or boiled to death and tasted gross.

Asparagus is super cleansing. I like to eat the tender tips and add the stalks to a green juice.
You mentioned Snowdrops ranch dressing. I am NUTS about that recipe. I've been using it this week on onion bread topped with micro greens, on salad greens, and as a dip for raw Cheez-Its. I'm going to finish it off for dinner with some asparagus. :)

I look for thinner stalks with tight buds. Hold the stalk with a hand on each end and bend it until it breaks. It will break naturally at the spot where it becomes tough. You can eat or juice the tough ends if you want, but it is too much tough fiber for me.

This thread made me be adventurous and try raw asparagus (I'm a picky vegetable eater), and to my surprise I'm hooked! The top part is bitter, but I love the stems.

asparagus outta my garden in spring can only be matched by fresh picked strawberries / rasberries / blackberries
and if didnt know it grows wild in many places in the spring such as rural michigan , it might be something like mushroom hunting for some if its in their region

I just tried this and its very good. I made a simple dip in the vitamix using avocado, tomato, garlic, and parsley. Yummy :) Thanks for the post.

I liked this so much that I had it again today. This time I did an experiment and cut a nice ripe avocado in half and used the asparagus to scoop the avo "butter" out of the avo shell. Its quick and easy and best of all its delicious but I still like to eat the tip without anything on it.

for the 1st time ever i ate some raw asparagus this week. i like it. had it 3 times and once cooked, but i don't like it with avocado. i like avocado way too much and it also dominates the taste of the asparagus to me and wastes that taste. i didn't make gauc though.
no pee smell... :D so i must definately not have the gene. :D

I just realized that asparagus is really high in iodine. If you have hypothyroid problems, then asparagus will be great for you.
But too much iodine makes some people (including myself) break out, so be careful. I can't believe I'm getting zits from too much asparagus . . . but I've had to cut back.
