The Butternut Appreciation Thread

I love butternut squash!

Today i made butternut "porrige" for breakfast, and yesterday i had butternut noodles with raw tomato sauce

What delicious things happen to your butternuts? I would love to know!

My butternut porrige
1 handfull of chopped up butternut
A little water
pinch of salt
cinnamon
oil
dried apricots
soaked sunflower seeds

Blend all but apricots and seeds, which you sprinkle on top. Serve!

I received one in my CSA box a couple weeks ago. I was going to make noodles out of it but was afraid I would not like it. I'll have to give it a try. It's a big one. I'll save a handful and start soaking some sunflower seeds and try your porridge, too.

I Like butternut squash noodles. I had so much butternut squash from the garden this year . . . it was crazy! I was eating it all winter.
